Smoked Pulled Beef Tacos Everyone Will Love | Homemade Corn Tortillas

    This recipe was enough for 20 people
    Ingredients
    Beef;
    - 4kg Oyster Blade Beef
    - 4Tbsp Salt
    - 3Tbsp Black Pepper
    - 4Tbsp Brown Sugar
    - 1 Jar of Chopped Chipotle Peppers in Adobo Sauce
    - 2 Bottles of Stout Beer
    Pickled Onion;
    - 6 Whole Red Onions Sliced
    - 2 Cups of Water
    - 2 Cups of White Vinegar
    - 40g Cooking Salt
    - 1Tbsp Black Peppercorns
    - 1Tbsp Coriander Seeds
    - 2 Bay Leaves
    Corn Tortillas;
    - 4 Cups of Corn Masa
    - 3 Cups of Warm Water
    - Pinch of Salt
    Garnishes / Toppings;
    - Coriander
    - Anything else youd like to put on it!
    Method
    Beef;
    1. Pat the meat dry and remove any silverskin.
    2. Generously coat all sides of your beef with salt and pepper.
    3. Set aside and rest for 1hr.
    4. Place meat into a smoker at 250f for 5hrs.
    5. Once internal temp has reached 165f, remove from heat into aluminium trays.
    6. Pour remaining ingredients into the tray.
    7. Cover with foil and continue cooking for a further 4hrs occasionally rotating beef.
    8. Once the beef becomes probing tender, let it rest for 1hr.
    9. Shred / Pull apart the beef and set aside until serve.
    Pickled Onion
    1. Place sliced onions in a container.
    2. In a pot, combine water, vinegar, salt, peppercorns, coriander seeds, bay leaves and bring to a light boil.
    3. Pour entire liquid over the onions.
    4. Set aside until serve.
    Corn Tortillas
    1. In a large bowl, combine the corn masa and salt.
    2. Gradually add in warm water while constantly stirring.
    3. Knead for 5mins until the dough holds together firmly and doesnt crack.
    4. Cover and rest for 30mins.
    5. Weigh out 50g pieces and roll into balls.
    6. Press down between 2 pieces of baking paper until reach approx 5inches / 12.5cm.
    7. With a non stick pan on a medium-high heat, lay down your pressed tortilla.
    8. Cook for approx 10seconds, flip and cook for an additional 30seconds, flip one last time and cook for another 30 seconds.
    9. Set tortillas aside in a dutch oven with a tea towel until serve.
