All of our marketing, in store, and ordering refers to it as a footlong Cookie but it is meant to be like cake and a brownie. if you want to compare something a little more similar, costco has smaller cookies that you can buy in a pack that are pretty similar to the ones you can get from subway as a side. it's like $12 and you get 24 cookies. subway also sells them in packs of 36 for $26

You should try the Starbucks Chocolate Chip cookie, and ask them for it warmed. You'd be surprised at how good it is. I eat one meal a day, and I make sure to budget my calories in such a way that I can also get a grande sweet cream cold brew coffee and the warmed chocolate chip cookie since I love it so much.
It's not fine tuning because not everybody likes soft cookies especially around the edges, not every cookie will have the same texture. I personally prefer crunchy cookies so for me fine tuning their baking would be making the cookie crunchier
