Ingredients
2 cups rice (short grain rice or sushi rice), rinsed and sieved
250g or 8.8oz ground beef
1/2 teaspoon salt
Gound black pepper
2 tablespoons chopped green onion
2 tablespoons chopped Korean chive(buchu)
Broth
5cm or 2inch length dried kelp (dashima in Korean or kombu in Japanese)
3 cups water
Use the same amount of water as sieved rice (if you have 2 cups of soaked or rinsed and then drained rice use 2 cups of water if you have more use more water)
3 tablespoons light soy sauce
Instructions
1. Place dried kelp into water and let it sit for an hour.
2. Pour enough water into a bowl and gently mix the rice with a whisk to remove any dirt. Repeat this process three times, then drain the rice and let it sit for 30 minutes.
3. Chop the green onion and place it in a bowl. Chop the Korean chives.
4. Season the kelp broth with light soy sauce.
5. Heat a pan over medium heat, add a teaspoon of oil, and stir-fry the ground beef. Season the beef with salt and cook it thoroughly.
6. Place the rice in the pot and pour the seasoned broth over it. Bring it to a boil, stirring occasionally Remove the kelp when the broth gets to a boil.
7. Add the cooked beef to the pot, spreading it evenly over the rice. Lower the heat, cover the pot with a lid, and cook the rice over low heat for 15 minutes.
8. After 15 minutes, remove the lid and add the chopped green onion and chives. Cover the pot again and let it rest for 10 minutes.
Before serving, mix the rice thoroughly and scoop it in an individual bowl.
