I think maybe my cacciatore is maybe too American? I used lots of San Marzano canned tomatoes, tomato paste, fresh cherry tomatoes, white wine, sweet Mayan onions, carrots, kalamata olives, capers, red pepper flakes, and even a twist of lemon with lemon zest. I did use fresh herbs and mushrooms, like you did 😊 I mean .... mine is delish, but i want authentic Italian, not American/Mexican, lol! Thank you for this beautiful authentic recipe!
