I grow my own sweet potatoes in NZ. Sweet potatoes are super food. The orange sweet potatoes variety is very sweet and a bit soft when boiling. They look good but be cautious about where you buy sweet potatoes from in China and other mining heavy countries. Some sweet potatoes are grown downstream of big mining operations because of their hardiness, using land and water that would challenge other crops, and sweet potatoes absorb high levels of lead. Most areas are fine, just don’t eat sweet potatoes from areas with mining.

how much longer does it preserve them? Becaus sweed potatoes already last a really long time. I had a sweet potato survive a full winter at room temperature in my apartment while being fully edible in the end. I'm sure with proper storage it could go more than a year.
