Turkey Compound Butter Total: 15 mins Prep: 15 mins Cook: 0 mins Yield: 1/2 cup A compound butter is a simple culinary term that refers to any butter to which other flavorings are added. This technique is wonderful for chicken as well. It really keeps the breast moist, adds flavor, and gives the skin a great crisp, shiny finish. The "secret" ingredient is a small dash of Chinese five spice, which contains ginger, cinnamon, and star anise and gives the turkey a very subtle and delicious aroma. This recipe makes enough for a 20-pound Turkey. Ingredients 1/2 cup/1 stick unsalted butter (room temperature) 1 teaspoon salt 1 tablespoon fresh ground black pepper 2 tablespoons fresh thyme (minced) 1/4 cup fresh sage (minced) 1/4 teaspoon Chinese five spice 1 clove garlic (finely crushed) Steps to Make It 01 Gather the ingredients. 02 In a small bowl, combine of all ingredients and mash with a fork until completely mixed. 03 Position the turkey so that the cavity is facing you and you are working forward towards the neck. Using a long, thin flexible rubber or silicone spatula, slowly slide the tool between the skin and the flesh of the breasts on both sides of the breastbone. 04 The skin is fairly tough and won't tear if you go slowly and carefully. You can pretty much separate the skin all the way from the cavity where you started to the front of the breast and down toward the wing joint. Do this on both sides of the breast, but leave the skin attached to the center of breastbone itself. 05 Divide the butter mixture in half and stuff it under the skin on both sides and massage it down toward the front of the bird. Spread as evenly as possible, but don't worry about getting it perfect, as it will melt and spread out as the turkey roasts. 06 Roast the bird according to whatever recipe you're following and cover the breasts with a piece of foil if it's getting too brown towards the end of the cooking time.

I used this recipe/technique a fe years ago when I made my first ever turkey and it came out absolutely fantastic! I was so proud of myself!! I have since done a turkey using Alton Brown's brine method but honestly I don't think it tasted any better than this, and this way was easier and less time consuming. Can't wait to make it again!! :)
I used this recipe the first time I made a Thanksgiving dinner all by myself (the first time I had really cooking anything by myself). It is still, to this day, the best thing I have ever cooked! The turkey was AMAZING! The herb butter flavor throughout the whole bird was incredible. Most meat you slow cook in the oven should be salted very generously. The meat absorbs the salt and the butter is the key, without the butter the salt runs off when the meat sweats it's fat. Make sure you use plenty of butter to hold the salt and plenty of butter.

This video is awesome. Plus your voice is so soothing. :) So, this is only my second Thanksgiving cooking the turkey myself. Last year, I bought an organic turkey and it came out delicious. This year, I bought a Butterball turkey. I'm watching "How to Cook Turkey Videos" to refresh my memory and I come across articles that say, Butterball turkeys are not too great because they are pre-brined and have lots of salt and water (but it's too late now I already spent the money). If this is the case, does this mean I should not add the herbed butter under the skin and on the exterior? In other words, what is the best way(s) to season/cook a Butterball turkey? Please help! Thank you in advance.

I am sure it will come out great. The only thing that I think I would change is the amount of water I put in the pan. I used a roasting pan and it I put enough water to bring it up to 1/2 inch but I should have used half of what I put. However I was pleasantly surprised since I got a lot of stock out of it to make my gravy. Also I tried to keep my turkey around 12 - 13 pounds so that it was manageable. Other than that the recipe takes care of itself. happy Holidays to you and your family.
LOVE! this recipe. You taught my husband and I how to cook our first Thanksgiving turkey and we've been using this method ever since. :) One note though, the flavored butter recipe seems to be missing from the blog post. Was this pre cooked turkey? I have a fully cooked turkey and I wanted to add some pepper and parsley and lemon zest to my butter but not sure if that will be over seasoning it since it's already cooked

I am sure it will come out great. The only thing that I think I would change is the amount of water I put in the pan. I used a roasting pan and it I put enough water to bring it up to 1/2 inch but I should have used half of what I put. However I was pleasantly surprised since I got a lot of stock out of it to make my gravy. Also I tried to keep my turkey around 12 - 13 pounds so that it was manageable. Other than that the recipe takes care of itself. happy Holidays to you and your family.
I used this recipe for Thanksgiving last year, and it was a huge hit. My first turkey, nonetheless. I can't wait to do it again next week!

You taught my husband and I how to cook our first Thanksgiving turkey and we've been using this method ever since. :) One note though, the flavored butter recipe seems to be missing from the blog post. Was this pre cooked turkey? I have a fully cooked turkey and I wanted to add some pepper and parsley and lemon zest to my butter but not sure if that will be over seasoning it since it's already cooked

My family enjoys eating the insides of chicken and turkey. its considered to be a delicacy to many people around the world. maybe you should try it sometimes :)
