Special Chicken Biryani
Part 1 - Preparing the stock
Nutmeg Powder - very little
Black Cardamom - 1
Bay Leaves - 2
Onion - 1/2 medium (cut lengthwise)
Mace - a little
Water - 1:2 (2 cups for 1 cup of rice)
Chicken Bones (got from boneless chicken)
Part 2 - Chicken Gravy for Biryani
Oil - 2 Tsp + Ghee - 1 Tbsp
Ginger-Garlic Paste - 1 Tsp
Fenugreek Leaves - a little
Mint - 4-5 leaves
Lemon Marinated Boneless Chicken - ½ kg
Turmeric Powder - 1/4 Tsp
Salt - 1/2 Tsp (adjust to taste)
Red Chili Powder - 1 Tsp
Tomatoes - 2 medium, cut into small pieces
Curd - 1 small cup
Coriander Powder - 1 Tsp
Garam Masala - 1/2 Tsp
Curry Leaves, Coriander Leaves, Green Chilies
Green Chili Sauce - 1/2 Tsp
Red Chili Sauce - 1 Tsp
Soy Sauce - 1/2 Tsp
Red Color - a little (very very optional)
Part 3 - Making the rice
Oil - 2 Tsp
Ghee - 2 Tbsp
Dry Masalas - Cinnamon - a little, Cloves - 5-6, Cardamom - 2-3, Mace - 1, Shah Jeera - 1/8 tsp, Kapok Buds, Star Anise - 1-2, Dried Fenugreek Leaves - a little, Bay Leaves - 3-4
Onion - 1/2 Medium, cut lengthwise
Curry Leaves - a few
Mint - a little
Ginger Garlic Paste - 1 Tsp
Green Chilies - 2, slit & cut in halves
Stock Water from Part 1 - 4 Cups (substitute with plain water, if insufficient)
Rice (soaked) - 2 Cups
