Maybe next time you can sift the batter in another bowl and transfer to tin instead of directly sift into baking tin. So you have no worries to make dirty of the parchment paper and that will be lot easier.

yea, you can substitute with a bit(1/4tsp for me) of almond extract

This is their original recipe…I prefer to eat when the cake is frozen and ice cool…you can taste more of the sour taste than sweet
