    I am a Numbers 's Nerd - WOW ! If we look @ the highest amount of $250/ month the yearly total for groceries is $3,000 for only one year !
    This works out to $1,000 a year PER person.or $83.3/ month or
    $20.83 a week. INCREDIBLE
    You more than rock at this food budget thing. You actually destroy the boulders [ obstacles ] and show people how it is done ! Great job Lisa

    This is what I love seeing. Not that I don’t like your going to the dollar tree videos, but personally I want to see what you eat on a budget in your regular life. My dollar tree doesn’t have anything but canned food and honestly I can get that cheaper elsewhere. So, this is always what I go for…feeding your normal meals during a week. Let me know what you got on sale and how you are using it. Just my thoughts.

      I stop going to the dollar store once they raise their prices because I could buy most of the things cheaper at Walmart or the same price when it come to food items for sure.

      The thing I like about the DT videos is the creativity. Replicating it doesn't mean we have to get the items from the DT, that just makes it all the better for us with better shopping options and prices. Lisa uses things in a way I never would have thought of which is great for reducing waste and keeping a low budget all the way around. I learn so much in each video.

      @@patriciacorpe6228 I have noticed at my DT that since the increase, there is now larger portions and more options and variety. I still find as before that somethings are worth it and other things are not. I have to agree with Veggie Lovin Accountant though that most canned goods are not one of the better buys. Especially beans and veggies that can be found lower elsewhere (at least with store brand labels.)

      Unfortunately our dollar stores have raised prices and stopped selling meats, refrigerated and items. So Walmart is cheaper even Aldis is raising prices

    To keep your mushrooms fresh forever, when you get home take them out of the container, part with a paper towel and then place in a paper bag. The mushrooms will actually dry, like Shitakes. They become even more flavorful.

    Lisa, love your channel....Escarole is super yummy, I'm Italian , Escarole and beans is a staple. you can chop it up and saute with EVOO, garlic and oil and if you like a little oregano, cook it down, like you would spinach then add cannellini or pinto beans , it's great like that or you can also add some water and salt a,nd a cup or 2 of ditallini or small shells let it come to a fierce boil, cover tightly and let it sit covered for 15 minutes . You can also Saute same way then drain as good as you can and stir in some shredded mozz and grated romano and a few slices of chopped bacon and bake it pie style,with a top and bottom crust

      Are you supposed to cut of the stems of escarole or can you chop up and eat.? With kale you don’t eat the hard part running through the leaf. Wondering if it was the same with escarole.

      @@MyBlazingLife I don’t chop mine. I sauté black olives a bit with garlic stuff the inside and tie with cooking string and then sauté the escarole. It is so amazing. Grew up in Italian household and this was a staple in our house. Other uses are with white beans and I don’t chop it finely, I wilt it first then put in the beans and sometimes a small can of diced tomatoes.

    The other day at Aldi, I got chicken quarters for .57 a pound. They were marked down. Took it home, clean and rub them with greek rub. Put them all in my Instant Pot. Once done, I clean a few and put others under the boiler to get the skin crispy. They are sooo yummy.

    Everything looks delicious.
    I have a gardening tip, which you may already know about.
    Take a large jug (a rinsed out cat litter jug with a screw on lid works great). Fill about 3/4 full of water. As you use your eggs, rinse them out really well with water and put into the jug of water and put on the lid loosely.
    It will end up smelling like rotten eggs (it will be ready to use in a couple of weeks ) but works great as a garden plant food.
    Keep adding as many rinsed egg shells as you want. Add water as the level goes down.

    My boyfriends coming for a visit this weekend. Ya know what I’m having him do? Curtains. In my defense, I’ll be cooking all weekend for both of us, including some meal prep for the next week of work while we hang out.     Love the video. The cooking and zero-waste principles keep my attention. I think we may be waiting a long time for butter to go on sale. I'm stretching my freezer stash with coconut oil (pantry stash). And I have dehydrated butter purchased in bulk for flavoring. The butter apocalypse was overshadowed by the egg apocalypse, but I noticed!

    I was just commenting to my husband about the lack of day old bread and reduced produce special racks in the stores. Very hard today to get marked down fruit/veg./bread.
    Now, for the escarole (which I' m going to attempt to grow since stores here in Winston-Salem don't seem to carry it...:(
    Saute entire head or more of chopped garlic in olive oil until golden (not crispy) and add large can or a few small cans tomato sauce with equal amount of water to cook down. Add a lot of fresh black pepper, salt to taste and parsley to taste. When cooked down to original volume of sauce, shred up escarole heads and cook (can cover initially to stuff it into pot) and when cooked to tender add a few cans (or cooked from dry) cannellini beans (white kidney beans) and simmer to tenderness you prefer. This is normally served as a soup---but we eat it as a meal over rice with crusty Italian bread. My Nan's recipe for what we simply called escarole and beans.

      That recipe sounds fantastic! I used to get SO MUCH discount bread and produce when Kroger was still around here. Now I'm lucky for the occasional mark down produce at Harris Teeter, but they never have good markdowns on bread, yogurt, or desserts like I used to get at Kroger.

      @@ThatLisaDawn I hope you can give that recipe a try in the cooler season---which this should still be, lol! If I still lived in Wake County, I could have run it over to you. And you already know the golden rule that there's no such thing as too much garlic---so if you want to put more you go for it!
      It really is tough nowadays to find good specials at the stores---the only one I can still usually get is the deal on manager's specials for meat at Food Lion. They seem to just throw out the produce and the care of it while still on the shelves has gone down hill. There used to be day old bread bakery outlets around---I don't see them any more---good skill to have is your baking/pasta making skill. Yours (that looks so easy when you do it) is the absolute cheapest way to go and tastier, too.

    Hey Lisa, I actually prepare dry beans and lie them flat in gallon ziploc bags in my freezer. Then I have beans for whenever I need! More economical if you have the freezer space.

    A good recipe for rice is to cook your long grain rice with a little less water than you usually do, add about a tsp of salt, about 1/2 tsp of cooking oil. If I have 1 cup of rice I use same measuring cup and and fill it up to where my rice was…then take out about 3 to 4 tablespoons. Mix everything together and cook on stovetop or in my rice pot. You can put a little turmeric to color it a beautiful yellow…plus it has wonderful benefits for the body. Another way is to take your rice ,after it has cooked and come to room temperature, add some butter to a sauce pan and add some diced up celery, carrots, onion and sauté until they are crisp-tender. Next add some slivers almonds (opt),and let nuts get slightly toasted. Now mix with your rice. Add S&P to taste. You can also make rice in the oven with Lipton onion soup mix and beef broth. Short grain rice is hard to keep from sticking together. Trick is always let your rice sit and do not stir for around 5-10 minutes to fluff up. Each grain is suppose to fluff and separate. Leave lid on and do not peak…otherwise condensation will form on lid and run into your rice making it have more liquid. If you can afford it buy a better rice like Basmati or Jasmine. The length of the rice grain will determine how your rice turns out…GV brand has so many broken pieces that it looks like floor scrapings from a mill. If I am going to eat rice I would rather spend a little more on a better rice and cut corners somewhere else maybe like the asparagus or a higher priced item. Basmati rice has a wonderful aroma of popcorn while cooking. All it needs is a pat of butter and I am happy. Some people like it just with some herbs or chopped green onions. Plus if you would have saved some chicken meat, diced sausage and used your pork fat…you have the base of making Jambalaya! I save a cup of diced ham after I cook one and freeze it, same with ground pork breakfast sausage, link sausage and pork chops or pork roast. Use bacon fat to start dish in, use about half of bell pepper, finely diced along with an onion and 1-2 cloves of garlic( all finely minced) also some chopped green onions separate. You can cut up the meats into bite size chunks and freeze too. Though everything is better to me when fresh…I do this to save me time or when I do not feel like spending a lot of time in the kitchen. It is the cooking and layering process of ingredients that will give your dish such great flavor. I suggest to anyone trying to make this or any Cajun dish to watch someone making it…John Besh has a very good video on FB. Where I learned how to make it properly. This dish is not hard and very economical to feed a hungry family. He believes in cooking with pork fat and seasoning things well. Also, you can make Emeril’s cajun seasoning and makes up around two bottles of what you showed for price of one at store. Sorry so long…just some ideas I thought you might like😊.

    BTW, I'm so happy to see you cooking a wide variety of tasty and healthy veg. Did you read about the new report showing that half of under-5 -year-old US children don't eat a single serving of veg each day? Jaw-dropping.

      I liked the escarole, I would definitely get it again. It's a bit on the bitter side so I'd definitely either eat it cooked or as part of a mix of salad greens.

    Hi from England. Wash your egg shells, save them up till you get a baking tray full, bake them in the oven, cool, crush small and put them out for slugs. They also hate coffee grounds.
    I love watching you cook even tho we couldn't eat what you make as we are vegan. 💖
