I recently made a blueberry jalapeno mead and it was amazing...I only left the jalapeno in for about 3 days and then pulled it out, had a nice router blueberry flavor with a backed end of spice, one of my favorites so far

fantastic video! i made my very first batch with raspberrys and an amazon home brew kit, its going alright but yall gave alot of good info! only question i see all over the internet, is headspace... yall used a 3 gallon jug but only 2 gallons of fluids for the most part, how important is a small headspace vs larger headspace? people have verbally attacked for being a 1/4 inch to high or low of headspace. i want to get a bigger jug with the spout like what yall have but shyed away due to headspace.

We've never had a headspace issue. Especially in primary, with fruit in, we typically slosh the fermenter around a bit to ensure the fruits are in the liquid as much as they can be. When we move to secondary, brews like this will get transferred to one gallon carboys. At that point, typically our ABV% is over 10% so there is less of a worry IF there is a lot of headspace.
But, you're right, people do tend to be eaten alive by others if there is more headspace for their liking. In the end, it's your brew, you can tell if something happens to start getting weird. But, in all likelihood, you'll be just fine.
We are always here if you have questions too!

+1 headspace in primary isn't an issue because the high CO2 production easily forces out the, much lighter, air.

Where do you find these large carboy's? I'm in Canada and don't see anything that is wide mouth that size.

Green jalapenos are under ripe, try getting your hands on red jalapenos.

Good idea! Our typical go to are the peppers in the red/orange range as we feel they're brighter and bring more to the party.
I (Christa) wanted to make something with them, so we have an experiment going right now with an oleo saccharum of jalapeno and Berries. When we tasted the syrup when making the brew, it actually tasted good! We will see how it turns out.
