    A little tip for the corn starch slurry. Mix in a bowl with cold water and then you take some of the hot broth and add the to the slurry before dumping in. It incorporates quickly. My mom taught me.😊

    I discovered that the honey baked ham store near me will have their ham bones for sale, sometime BOGO. They are very meaty and really make your beans taste so good. It's nice to have in the freezer.

    You can't go wrong with budget meals nowadays. Our favorite is French onion chicken. It's just French onion soup and chicken. We serve it over mashed potatoes, but you could serve it over rice or egg noodles if you don't have mashed potatoes.

    I made the white bean and sausage dish tonight!! My crockpot cooked a little slower, however it was a BIG hit with the family! I made some simple cornbread on the side too.

      My family won't do cornbread, but they'll do a French loaf. I miss it because my mom always did cornbread with meals like this when I was growing up. I don't know how my own kids and my sister don't care for cornbread.

      @@yvonnepalmquist8676 try adding a handful of grated cheese and a drained can of corn to the batter. It may need to bake a little longer. You will be amazed how quickly it disappears!

    I appreciate it so much, that you always say the same thing. That this is not meant to be a regular meal plan. Of course, we can survive one day for 2$ only on instant ramen, but that is not sustainable for a human body and noone deserves to live like this. It is so kind of you to encourage people to seek support when they go through tough times, and to give support, when they have resources to share. 💕

    Whenever you are using smoked sausage, you need to brown it on the stove first it will add so much flavor to the soup

      This is one of my go-to recipes! I add a bit of cumin and chili powder to kick it up a notch. I shred the cooked chicken, give it a few minutes to soak up the salsa, and then serve it over brown rice.

      This takes me back to my childhood when my momma fixed our family of 7 this dish . She would either serve it as a hot dish or she would use noodles, mayonnaise, peas and celery to make a cold pasta salad . It was tasty either way😋 10:24

    Variety helps. My mom was a child of the depression. Bread and butter with jelly along with a side of apple sauce and carrot sticks with the crock pot meal. There is a reason that was done. It increases calorie intake along with nutrients. It also pleases the palate.

      I am 40 and grew up with a single mom and we almost always had applesauce and bread and butter with dinner. Definitely a good inexpensive way to bulk up a meal.

    These videos are so timely, Mindy! As a single person, I don't have the struggle for cheap meals. Its very helpful to have videos like these to reference when I am chatting with folks that mention things are getting tight. I wouldn't call these meals basic. You take time to make them appealing both visually and with flavor.

    If you want a sauce to "marry" and you're using canned ingredients... you can put them together for in the fridge and cook later. We batch cook ground beef so often that's ready to go. This last batch, we had bell peppers that needed to use up so we cooked those with onion and the hamburger. So yummy for tacos, pasta, sloppy joe etc.

    I cook these recipes for my family all the time. I make the bolognese more traditional with ground beef. And use dried kidney beans for the beans and rice with creole seasoning and Worcestershire sauce. It is so delicious, healthy, and filling.

    Other ways to thicken potato soup: potato flakes; puree some of the soup, as you did earlier with the beans; or add some pureed white beans for some extra protein.

    About the white bean slow cooker process: I never would've thought of adding a package of Ranch Dressing and I was surprised you added salt at the beginning. I guess the pre-cooking and the long time in the cooker takes care of that. Your family is lucky to have you. As always, thumbs up.

    Thanks Mindy! I try and keep beans, rice, pasta and potatoes on hand.Polish Sausage freezes well, and my grocery has a bag of celery,carrots and onions already chopped in the freezer section. These meals are perfect when bad weather, kids activities or just wanting to drop and go. I especially love this bean recipe, so it is first on my list to try ❤

    My favorite type of your videos! I make potato soup often and, when the potatoes are done in the crock pot I like to mash some of them down with a potato masher (I do this right in crock pot) but leave some chunks whole. Works every time. I like a thicker, chunky soup. I like to use a ham bone that I froze after Easter but I have also used a bit of diced ham. I do the same with beans, and always do a quick soak. Great info!

    Mindy was right when she was talking about buying like your spaghetti and bulk it's probably a little cheaper but for us moms that are like on food stamps and fixed incomes and whatnot food pantries are your best friends because you will never have to pay for spaghetti again like ever and they usually offer you another pasta on top of that as well like elbow Mac or even egg noodles if they're there like normally you can get two different styles of pastas out of a food pantry if they're available at the time of course but also it's another great place to get like your petite diced tomatoes or if you're like me and have a garden and learning how to do food preservation for yourself like canning and freezing Etc then that would also help your budget go further I mean yeah you can spend some money in your garden don't get me wrong but in the long run it pays for itself and it helps your food budget out so much in the winter time Food For Thought for all your mama's out there on tight budgets and have the yard to have a garden and always remember you don't necessarily have to have your garden in the backyard unless of course you have a homeowners association you have to deal with otherwise you can use your front yard to I have a garden in my front yard I'm going to have one in my side yard and in my backyard because I would rather have food production versus having to cut grass all the time😂

      I saw some of the Farmer's Market takes food stamps too and some of them said they match 25 dollars for fruits and vegetables too. So if you give them 25 they give you 50 to spend.

    Great recipes! I always try to stick to $5 meals for my husband and I, have to get practically everything on sale.
    White beans, I sauté onions, green peppers and 3 or 4 slices of bacon, or leftover ham from holidays in bacon grease and, add chicken broth and Tony seasoning. Then add beans
    Serve with
    Rice and a cornbread
    1/2 of cornbread is saved for the next days meal.

      Oh yeah! My original idea for the beans was bacon, but when I coudn't make it work I switched to sausage. The bacon grease would add some great flavor, too!

      $0.60 a box, I make it so buttery and crunchy on the bottom by adding 1-2 tablespoons of butter 🧈 to my cast iron skillet 🍳 and heating that up in the oven for 10 minutes at 400 degrees before adding my cornbread mix in the
      skillet
      So good!!

      I noticed it a few weeks back, and when I researched, it looked like there was a recall. But they're coming back now! They're such a cheap way to add some flavor to a dish. One jalapeno is like 14cents! LOL

      For those that don't like heat, if you can swing a bell pepper or a small can of green chiles or other non-spicy pepper in the budget, they go a long way for flavor, too. They're just not quite as inexpensive as jalapeno peppers. Don't be afraid to try or learn about different varieties of peppers. I never realized how much I like various peppers until later in life, learning they're not all spicy.

    When I make potato soup, I like to mash some of the potatoes in the liquid after they are cooked through. This makes the soup thicker without adding thickening agents. I also grate cheese and add it to the soup.

    I love that tip about quick soaking beans, i was always under the impression that you had to boil them for hours and hours, but according to you you boil for two or three minutes and then sit in a pot- definitely going to try that Thanks!!!

    Ibfind if you put the meat in at the beginning of cooking its flavorless. I always put it in towards the end of cooking so it doesnt taste like flavorless blobs. I mean in beans and potato soup, stuff like thst. Definitely not roasts and such. Lol great video

    I'm not on a strict food budget, but I like different recipes, and if they're cheap, so much the better. The beans and the potato soup look great. This is the first video of yours I've seen. Gonna dig through your channel and see what I can find. (And maybe recommend some to my mother who IS on a budget and should use some of these, but probably won't.)

    I used canned veggies. But I save the liquid from them. I put the liquid in the freezer in a container and when it is full, I use it as stock in my slow cooker. I may add some beef or chicken stock to it for added flavor

You consistently impress me with your video ideas and professionalism - truly, I have re-watched many, many of your videos to understand why they seem so terrifically edited/can't-stop-watching and I have learned a lot!     Great recipes, thank you! There is an Amish store near me. The spices are super cheap there & they are great spices. You need to keep things like garlic powder in your fridge when it is humid because they have no caking agent in them.

    I cook stuffed peppers in the crockpot. I use different meats, seasonings, tomato based liquid, and a little cheese. Try different combos like tex/mex, Italian, cheeseburger, etc.

    These look like excellent staple recipes. Can you suggest how to incorporate these into more rounded meals. What can I add to make it heartier or more complete, when my budget has a bit more cushioning? Side salad or a veggie side? I notice that you also add cut fruit to your meals often would this be a place where that would come into play? I absolutely love these videos. I am a busy person with a home of 7. All hard working and large appetites, I adore the simplicity and inspiration I get from your videos. Thank you!

      Buttered bread, Jiffy corn meal muffins - I make two boxes as directed and then add one half cup sugar and mix it again briefly, side salad, for a cooked vegetable choice I would use two cans of the same veggie for your size family or a can of peas mixed with a can of carrots, celery and carrot sticks with a side of ranch or blue cheese or poppyseed or raspberry dressing - whatever is on sale that they will eat or that you have been wanting to try, biscuits if you can find reasonable or make your own, cut up two or three apples and mix with applesauce and cinnamon - no I don't peel them.

    My mom has made her potato soup starting with a mirepoix my entire life. Instead of any meat or cheese, she makes a simple pot with egg noodles and evaporated milk at the end. The only seasoning other than the aromatics is salt. It's silky, cozy and oh so delicious. It's fast, affordable, and it last for days. The egg noodles make it very filling.

      Today at my local Eastern Panhandle West Virginia Walmart a five-pound bag of Russet potatoes is $4.14 and a ten-pound bag is $6.14.

    What you did with the sausage link is genius! I’m not a fan of sausage in links like that because it’s often times chewy to me, but I could see myself enjoying it all minced up like that in those beans. I will be trying this

      I find that I like the white beans a little better. Navy beans are another one I use a lot. I don't know why.

      ​@@SeeMindyMomIf I may suggest it prenatal vitamins I have thyroid disease and my hair has always fallen out and been shoulder length It is now almost to my behind and it only took about 3 years to get that way The vitamins were a game changer regardless you what lovely❤

    I'm a crockpot girl through and through, and I have found my people! Can't wait to try these. Also made the "ranch house surprise" from your recent video and it was a HUGE hit with my husband and toddler. Do you think it would freeze well? Got another little one coming this winter and would love to add a few frozen batches of RH surprise to my postpartum freezer meal stash.

      I don't know that I've ever tried to freeze it. I can't see why it wouldn't work, you just may need to thaw it out before you pop it in the oven.

    Another hot dish our family always enjoyed was kind of like shepherds pie
    Brown 2 lbs of ground beef( I choose ground turkey), w chopped onions drain grease
    Spread meat mixture like)
    Mix 1 can tomato soup w 1/2 can water, pour over veggies
    Fill the rest of the pan with either sliced potatoes or mashed
    Then mix 1 can cream of mushroom soup w 1/2 can milk
    Pour over the potatoes
    Season well
    Cover with aluminum foil and bake 375 1 hr 15 minutes 7:58

      You're fancy, lol. When my kids where little I would just do the meat & veggie mixture on the stove top and serve it over mashed potatoes (open sandwich/diner style) for my "kind of like Shepherd's pie." Now that they're old enough to help, we do make the recipe properly and bake it.
