    great video. can't stress how important it is to bring the meat to room temperature. I've been a meat cutter for 21 years and this is the most important piece of advise I give to my customers. most go straight from the fridge to the grill, afraid to let meat stand on the counter for an hour or so. it's the only way to cook a steak evenly. subscribed.

    I tried this last night. I seared it on the stove and finished it in the oven in a cast iron skillet. Perfect! Great video and you have an amazing personality, Di.

    Emeril has a great steak rub. Its perfect seasoning for a steak. its better than just salt and pepper.It should be in your supermarket

    Hey, great video by the way and I am excited to try this, What sort of thermometer do you use? Is a simple instant read thermometer like Chef Remi Cooking Thermometer ideal to test the internal temperature or do you require something more specific?

    Just grilled two steaks last night. They were so good and tender, that the meat just tore off the bone like paper, and melt in the mouths like butter. I also want say, thanks for the great video .

    I like a steak like this one well charred outside, medium rare inside. I find the surest way to get that is to start the steak when it's cold.

    Hey, once you preheat the grill to high & put the meat on, do you leave on high or reduce the heat once the meat is cooking for 6 mins before turning? Casey O, looks, better than you buy in a steak house, hate burnt or crusty on meat...

    Question: now while you're doing the feel method, are you pressing you're finger against the thumb or just slightly touching them? dont know if its a dumb question but I'm just wondering.

    I only use a thermal probe (thermometer) and add garlic to the salt & pepper. 500° F cross sear 4-6 minutes per side depending upon thickness and rest with foil.

    Beautiful job. I may catch hell for this, but I love during the resting period, adding a drizzle of Kikkoman Teryaki sauce. All other brands are too sweet. Heat it up in the microwave with a little garlic powder before drizzling. It's kind of like an au jus. From my perspective, it doesn't take away from the purity of the steak experience, but adds to it. The natural juices along with the sauce are pure heaven. Thanks for the video.

    I would use avocado oil in place of olive oil since it has much higher smoke point.

    It's midnight here, 1 steak on my freezer, and this made me hungry, I will need to wait until tomorrow to not make noise now :S
    Btw one question, do you recommend salting steak BEFORE cooking? I've read salt dries a bit the steak while cooking on the grill.

    Superb video Di! I just have a couple of questions: First, I heard that you're only supposed to put salt on the meat just as it goes on the grill, and that if you include salt with the rest of the marinade, it draws out much of those beautiful juices. Is that true? Second, to keep your steak from getting cold while it's resting, can you put a piece of aluminium foil around it? Finally, instead of cooking your steak on a grill, have you ever tried cooking your steak on a very hot cast-iron pan? Do you like to do that every now and then too?

      koyunbaba73 The chefs that I've seen prepare this have done it as shown. The meat only rests for 5 minutes, so its usually the perfect temperature and doesn't get cold.     You want to find a consistent reading between 145°-150°. Grilling w/propane- let it grill for seven minutes, flip and grill for five or so more. Good taste!
