My review of Lemon: Wow. I have been begging Nick to give baking a shot and these were worth the wait. Texture: these are so darn close to bakery muffins. BY FAR the best low calorie muffin I have ever had. Flavor: I love lemon and this did not disappoint. Nick is spot on w his description of needing fresh flavorful ingredients to go into these low calorie. These tasted wonderful! Instructions: such precise instructions. 59g of batter per muffin is spot on. The bake time: 16-18 spot on. His explanation of having that perfect texture and one min more might compromise that was spot on. I checked on mine at 16. Needed two more. At 18, was exactly the ever so slightly underdone perfect texture. And the glaze was such a nice treat. Bonus: my kids were circling and fighting for the batter (so was I). You have NO CLUE there is protein powder and that this is a lower calorie batter. Absolutely masterpiece. Must try. Must subscribe. Must like. Must be annoying like me and beg Nick in his IG DMS for more baking vids. Can’t wait for brownies!

Bought the cookbook. Saw the muffin recipe that called for pumpkin pie protein powder and figured I'd have to skip that one since the powder was not available. Glad I came to the video and saw the substitution he recommends, as I do have the unflavored multi-purpose protein. So helpful!
I've tried the lemon muffins and the pumpkin spice, and both blew me away. I used oat flour for both (diabetic mother and celiac uncle), and was particularly amazed how good the texture was for them. Greg Doucette had already set a high bar for anabolic muffins for me, but you somehow raised it!
I made the pumpkin pie muffins and these are so so so so so gooooood!!!!! Not gonna lie, had 3 for breakfast just ate one as a snack. Any cake made with butter becomes "hard" only in the fridge not at room temp if you keep it outside it's fine. If i make a cake i intend to keep in the fridge i always use oil because i like my cakes soft if i take it from the fridge at that moment (butter gives more flavour and makes cakes richer).
Okay, now I have made two out of the 3 recipes -made the lemon muffins this go around. These are really, really REEEEEEAAAAAAAAALLLLLLLLLY Gooooooooodddddd!!!!!!!!! Yes, they are that good they deserve the extra letters and punctuation! I didn’t have PEScience though. I can’t even believe these are so low in calories and still have a decent amount of protein while having such a great treat! These ARE a “must try” recipe for sure! 🔥 🔥 🔥
The banana bread muffin is outstanding. I didn't have any Pescience blend available so just used what I had on hand: optimum nutrition whey and ON casein. My modifications: 60g vanilla whey, 33g chocolate casein (lol, only kind I had) and instead of 80g brown sugar swerve I went with 50g of it and 30g of Mrs. Butterworth sugar free syrup. Opted for the syrup bc I was a little worried about the whey drying out. I used a jumbo tin so only six muffins baked at 350 degrees, pulled at 20 mins. Thought I had pulled them too late bc cooked all the way through, but they were perfect. My biggest problem was not eating them all in one go. 😆Great job dude, going to try the pumpkin ones next.
Great recipe! I just made the lemon ones and they are delicious. I normally avoid protein baked goods because they sacrifice too much fat in the recipe so I like how you still include whole eggs and 2% yogurt... If using a muffin tray, I woud recommend putting water in the middle two spots to create steam in the oven and give the muffins an airier texture. I still lined the tin with silicone cups for the batter but left the center two holes as is and filled them maybe three quarters of the way with water
I just made the pumpkin muffins this morning for breakfast. HOLY HELL!! These are outstanding. Just like a real fat/sugar loaded muffin. I made some cream cheese frosting for them and that kicked them up another notch. *Side note. I didn't have a banana so I used unsweetened applesauce.
My Review of Banana: My kids had no clue Maybe a tougher critic - my wife had no clue This is God tier Anabolic baking Absolute 10/10 for the calories and taste. You will have no earthly idea that these are a lower calorie version. Nicks directions are perfect as usual. If you pull these out of the oven right at the proper time, they are ever so slightly gooey. Perfection Can’t recommend enough and this vids views needs to get run up !

Just made the banana ones and I used vegan protein powder because that’s all I had so I expected them to texture wise come out not as good as in the video, BUT THEY CAME OUT FLUFFY, MOIST AND AMAZING even though I used a vegan protein powder!!!!!! I was shocked, and I kept the grams of protein powder the same 93 grams, WOW THESE ARE GOOD! Amazing recipe ❤

I just made the lemon ones and they are outstanding! I wouldn’t recommend storing them with the glaze though. Even with the paper towels under, the moisture still turns the glaze into liquid after a few hours. They’re still great I just prefer a glaze that’s set.

Lemon muffin review: Nick you out did yourself! When I was pouring the mix into the cups I couldn’t help myself and I had to taste the batter. I was already pleased with the batter and I couldn’t wait for them to bake. Once they were done (sorry Nick) but I did not wait to try and ate a hot ass muffin and let me tell you even though I got burned a bit… that thang was so good! I’m not gonna lie I can’t remember when I had a muffin. But this muffin just changed my brain chemistry 🧪 like wow! It was so nice and soft and gewey and it had a legit lemon flavor that are in non protein desserts. I had 4 today…. They are that good! Y’all have to try 10/10 go to the market at get baking because it’s worth it. Thank you Nick… these are going to be a weekly staple. P.S my momma gave them a try and she loved them!
I rarely bake doh but I tried the first one and literally eating one now! It's quite addictive I can say... I only changed the lemon which I dislike with orange and it's delicious!
Only had 12 silicone muffin cups so recipes for 13 was slightly off :( Made the pumpkin pie ones and they were delicious. Ended up being 106 kcals each for a dozen instead of 13.
I just made the lemon ones today and I was blown away! I'm not a fan of lemon at all and really enjoyed it! I also just ordered PE pumpkin and vanilla flavors with your magic code. Don't normally comment, first for any of your videos. I've seen so many but I happened to have the ingredients to make the Banana Bread muffin. I also bought Walmart's Banana Nut Loaf Cake (150kcal/slice). I did a blind taste test between that and the muffin with my girlfriend and it was just absolutely blown out of the water. I'm shocked at how good it is. I'm looking forward to doing more of your recipes including your upcoming brownies. Side Note: I know you get a ton of requests to make different items, but I have searched high and low for an apple crisp desert that works (apple poo just sucks). Please give it a go and see if you can come up with anything at all where I can have a serving of ice cream and apple crisp together. Thank you brother!

I am almost positive these muffins will be the best protein muffins I’ve ever had when I get around to making them (waiting for those bananas to get realllll ripe!). I do have a question for you though, so I have a ton of Greek yogurt I’d love to use but am not a fan of lemon unfortunately. Do you think there is anyway I could replace the lemon extract with vanilla and the juice with milk/water or would that just totally throw off the balance of the recipe?

Do wish they were higher volume, though. They are gone in 3 bites. Maybe that's just my nostalgia for giant lemon poppy seed muffins. I'm willing to tolerate up to 170-200 cals per muffin and batch of 6. Might try next version with jumbo muffin liners.

The annoying things about these are that usually my family doesn't eat my protein snacks but these seem to disappear very quickly! I made the banana bread ones first and they taste like delicious muffins - not protein muffins, just delicious muffins. Thanks man!

I usually make a ton of one variety and freeze them in resealable vacuum bags. I've just been making the blueberry muffins Greg wrote up years ago, but with Quest whey/casein blend since it's very cheap at a few supermarkets near me. But I have picked up some PEScience protein with your code, Snickerdoodle is an A+.

That is one factor. Also casein/whey ratio. How many grams are in each scoop. How sweet and what overall flavor does it have. There are many things that go into it
I made lemon cupcakes... I don't think I did a great job though. I just used straight up whey protein (in my country we don't have whey/casein blends) , I forgot to make a mix of whey/casein lol. I also didn't have muffin liners so I just used a variety of different small size silicone tins I had, and I think ... Well me and my family don't really like underbaked goods, which is a shame since underbaking >>>>>>> overbaking in protein cooking. So I don't like the combination of underbaked and lemon, to me it tastes gross. But I think it might work better with banana cake since even the full fat/sugar version of banana bread is dense and moist. I'm defo gonna try out the other recipes. =) Oh yeah, they're still edible, still p good for protein baking, but I must try again... and buy more swerve since the recipe uses so much :3

Being too expensive is stopping you from investing in your health? Lots of people are actually protein deficient and could really benefit from the added protein In their diets
Oddly enough I purposely made all of my creami recipes with no protein for that reason. Most baked goods will have protein powder added though. Even with the protein when you portion out the ingredients I think there are 60-80 cents per muffin which is very cheap when you are thinking about protein snacks.
@@aaronbailey23 which is less than half the price of a protein bar, so very important since these protein muffins are a great substitute for protein bars.

Just made the banana ones and I used vegan protein powder because that’s all I had so I expected them to texture wise come out not as good as in the video, BUT THEY CAME OUT FLUFFY, MOIST AND AMAZING even though I used a vegan protein powder!!!!!! I was shocked, and I kept the grams of protein powder the same 93 grams, WOW THESE ARE GOOD! Amazing recipe ❤

We LOVE all things pumpkin and will definitely make these again. Gonna try the lemon one next. Probably tomorrow. 👌🏻
I just made the lemon ones and they are outstanding! I wouldn’t recommend storing them with the glaze though. Even with the paper towels under, the moisture still turns the glaze into liquid after a few hours. They’re still great I just prefer a glaze that’s set.

Lemon muffin review:
Nick you out did yourself! When I was pouring the mix into the cups I couldn’t help myself and I had to taste the batter. I was already pleased with the batter and I couldn’t wait for them to bake. Once they were done (sorry Nick) but I did not wait to try and ate a hot ass muffin and let me tell you even though I got burned a bit… that thang was so good! I’m not gonna lie I can’t remember when I had a muffin. But this muffin just changed my brain chemistry 🧪 like wow! It was so nice and soft and gewey and it had a legit lemon flavor that are in non protein desserts. I had 4 today…. They are that good! Y’all have to try 10/10 go to the market at get baking because it’s worth it. Thank you Nick… these are going to be a weekly staple.
P.S my momma gave them a try and she loved them!

Only had 12 silicone muffin cups so recipes for 13 was slightly off :( Made the pumpkin pie ones and they were delicious. Ended up being 106 kcals each for a dozen instead of 13.
I just made the lemon ones today and I was blown away! I'm not a fan of lemon at all and really enjoyed it! I also just ordered PE pumpkin and vanilla flavors with your magic code. I have loved all the PE flavors I have tried thus far. Can't wait to make the other 2 muffins soon. Shoutout to cream queen for coming up with the awesome muffin ideas! Nicely done!

Don't normally comment, first for any of your videos. I've seen so many but I happened to have the ingredients to make the Banana Bread muffin. I also bought Walmart's Banana Nut Loaf Cake (150kcal/slice). I did a blind taste test between that and the muffin with my girlfriend and it was just absolutely blown out of the water. I'm shocked at how good it is. I'm looking forward to doing more of your recipes including your upcoming brownies.
Side Note: I know you get a ton of requests to make different items, but I have searched high and low for an apple crisp desert that works (apple poo just sucks). Please give it a go and see if you can come up with anything at all where I can have a serving of ice cream and apple crisp together.

I am almost positive these muffins will be the best protein muffins I’ve ever had when I get around to making them (waiting for those bananas to get realllll ripe!). I do have a question for you though, so I have a ton of Greek yogurt I’d love to use but am not a fan of lemon unfortunately. Do you think there is anyway I could replace the lemon extract with vanilla and the juice with milk/water or would that just totally throw off the balance of the recipe?

@@Exercise4CheatMeals Yes! Made a batch of the Lemon Glaze (with added poppy seeds!) last night. Used the silicone muffin liners from your affiliate link. Love the taste and texture. Do wish they were higher volume, though. They are gone in 3 bites. Maybe that's just my nostalgia for giant lemon poppy seed muffins. I'm willing to tolerate up to 170-200 cals per muffin and batch of 6. Might try next version with jumbo muffin liners.

I usually make a ton of one variety and freeze them in resealable vacuum bags. I've just been making the blueberry muffins Greg wrote up years ago, but with Quest whey/casein blend since it's very cheap at a few supermarkets near me. But I have picked up some PEScience protein with your code, Snickerdoodle is an A+.

Yes, it's pretty easy to make modifications to these muffin recipes. I made double chocolate chip and apple cinnamon muffins for example. But he already has a chocolate chip muffin recipe you can use if you don't know how to do that.

Why does my muffins deflate or collapse after I pull it out of the oven?

Isn't it likely that you had different results with different protein powders because they have varying amounts of guar and/or xanthan gum in them?
That is one factor. Also casein/whey ratio. How many grams are in each scoop. How sweet and what overall flavor does it have. There are many things that go into it
I made lemon cupcakes... I don't think I did a great job though. I just used straight up whey protein (in my country we don't have whey/casein blends) , I forgot to make a mix of whey/casein lol. I also didn't have muffin liners so I just used a variety of different small size silicone tins I had, and I think ... Well me and my family don't really like underbaked goods, which is a shame since underbaking >>>>>>> overbaking in protein cooking. So I don't like the combination of underbaked and lemon, to me it tastes gross. But I think it might work better with banana cake since even the full fat/sugar version of banana bread is dense and moist. I'm defo gonna try out the other recipes. =)
Oh yeah, they're still edible, still p good for protein baking, but I must try again... and buy more swerve since the recipe uses so much :3

I wish you had some no protein powder needed desserts. I'll be wanting to make them so badly but protein powder is so expensive.
Being too expensive is stopping you from investing in your health? Lots of people are actually protein deficient and could really benefit from the added protein In their diets
Oddly enough I purposely made all of my creami recipes with no protein for that reason. Most baked goods will have protein powder added though. Even with the protein when you portion out the ingredients I think there are 60-80 cents per muffin which is very cheap when you are thinking about protein snacks.
Protein powder is not expensive at all. Most brands are around $1 per serving.
@@aaronbailey23 which is less than half the price of a protein bar, so very important since these protein muffins are a great substitute for protein bars.
