I've started substituting half my almond flour with (frozen) pulverized (blended) Mozzarella in my baked goods (yeah, just mix it in with the almond flour, no pre-microwave needed). I find it gives the baked goods a more bread-like texture after baking (in cookies, it makes them more crispy, too). I haven't done muffins yet, so I will try and see.
Traditionally, muffins were more dense. Now, the premade muffins are more like cupcakes. So people are used to those. Also, muffins weren't as sweet as cupcakes traditionally. When I had a home bakery, I would use frozen blueberries. I'd put them on a paper towel and pat them dry. It kept them from making the dough purpley- grey. For us at home, I don't bother with the extra step. We don't care about the color as long as they taste good 😂. I'm definitely going to try these! Also, I've been using Victor's sugar replacement blend from Southern Keto instead of buying Swerve. It's cheaper. You can share that with your viewers. He makes regular, powder and brown sugar replacement.

When you slice it up and pan fry it up in butter you’d swear it was French toast! I have sugar free honey and it’s the bomb!

They also work well for my partner who isn't keto, but does high protein snacks while working. Get some Gorilla Glue and put a few drops around the handle of your microwave. I had to do that recently and it works like a charm. Also, the muffins look so good!
These blueberry muffins look amazing. I Luke that it kept a nice shape! I am so used to having flat keto muffins 😂. One tip is to leave a tablespoon of blueberries for the top of the muffins to make it even more prettier. 😊

careful substituting with coconut flour - it will change the required liquid ratio needed. you could swap out pumpkin seed four instead. or sesame seed flour. those won't effect the liquid ratio. for pumpkin seed flour - its hard to find in that form but if you go to your local mexican store and get pepitas (it's literally pumpkin seeds) you can just grind them up. or.. hey it's almost thanksgiving - save the seeds from your pumpkin .
Hi ladies , these kook fabu! an other thing you can do with berries is coat them as you did and put them on top the uncooked muffins and just tap the top of them lightly with three of your fingers flat. Also if you buy a small cookie scoop at a food service store , the kind that has the little swinging half circle you will get a more consistant fill and muffin or cookie and that makes the actual baking time texture and size consistant. That being said i would load one of those babies up with keto cream cheese frosting and eat it up no matter how many berries or how much moisture it has. Yummmmmm. You two rock, XXXXX , oh and lemon zest in the frosting would be so good too. I need to go get cottage cheese now!!!!

I think you could use any protein powder or more almond flour, the protein powder has monk fruit but it’s a small amount so I don’t think changes the taste much.

The bottom of my microwave handle is broke too 😞 There is no way to fix it. I have just learned to pull from the top. When that decides to break I am not sure what I will do 😕 I don't like blueberry foods. I love blueberry's raw by themselves just not infused in foods, ie pancakes, muffins and the like. Too wet! My blueberries were large..they had too much moisture..so bottom half of muffin was a soggy mess. But the muffin part was good…I think it would be perfect for lemon poppy seed!!💕
good subs for almond flour : ground sesame flour , or ground pumpkin seed flour. the mexican store calls them pepitas - much cheaper to get them there and grind your own. they are a 1:1 sub for almond flour and you don't need to adjust the moisture content as you would with coconut flour. carbquik- it's a low carb version of bisquick. no nuts. you might have to adjust the baking powder/ baking soda since it does have it in it.
LERI watch UA-cam make ice cream Well I made some and now I'm just waiting it to freeze but the way I did it is I used to cottage cheese the light you use for your blueberry muffin that brand then I put a lot of vanilla can a pineapple a little bit of the juice and there's The thing you can buy to make your own whip crlame and it's more in the liquid form so I poured a little bit of that in there to thicken it to make it more fluffy and put it into my Protein blender and blend it all up and start pouring in the cup and then putting some more of the pineapple so I'm waiting to see what it tastes like after it gets out of the frozen area but taste in it before I put it in the fridge cause I put a lot more vanilla and you guys did it actually taste pretty good that way it tastes like a yogurt A pineapple yogurt

I’d imagine you’d have to freeze it then pulverize it. I very much prefer crispy cookies so I’ll definitely give that a try!

This is the first time we’ve used silicone liners are I agree, maybe the moisture can’t bake out? At least we know for next time ;)
Or take them out of it silicone while they are still hot so the moisture isn't trapped

If you don't coat the blueberries, and just layer them on top of each muffin, they'll sink into the muffins but not all the way to the bottom.

My husband had a tube of JB Weld in his workshop, he used it on a kitchen repair (not a microwave handle) and it has held up for probably 10 years.
