Yes to your comment on the video! The Achu soup should be slightly tangy but not too "sharp". If the taste is mild then the kangwa is not enough. Rose Line I got my "mortar" from a garage sale. But I've never seen a really large mortar here. I've seen average-sized ones in the kitchen section of an Asian store. Maybe you could look there.

Olive Nk, I only added salt to the meat. The richness of the stock is all from the meat fats. Your water should be at the same level with your meat so your stock is really tasty. I added the Achu spices just before blending the stock and palm oil. Sorry, that part of the footage got missing. U guys do know achu is soap right . The science behind it is the base (kamwa or baking soda) reacting with the ester (palm oil) to form soap. Saponification 👌That’s y it foams 😏

I love Achu! It's my favorite. It looks so simple in your video. But I am afraid to make it myself, because I tried one horrible soup once that tasted like soap. And when in Cameroon people told me it was very delicate and easy to mess up. Do you have any idea what that woman could have done wrong to make it taste soapy? Just so I can avoid making that same mistake.
