    Aaaaah, the 1st time I every seen someone use the same marinade as me. Jalapeños powder changed my game amd ghost pepper power. I also use anetto power.

    Never cooked in lard? As a kid that is all my mom used. Made her fried chicken the bomb.

    They use "Beef Shortening or what is sometimes called A/V oil or A/V shortening. It's a vegetable oil or shortening and beef tallow mix. Sometimes when you eat Popeyes you can almost taste a beef flavor. I'm starting to wonder if Popeyes uses corn starch in both their flour and their wet batter. When I eat their tenders, It's almost like a crunchy yet gummy texture on the skin. I'm also going to experiment with All-purpose vs self-rising flour. I suspect they make the ghost pepper wings the same way they make the spicy ones. They just use a seasoning blend with some ghost pepper in it

      +Shon Ferguson Thanks! Yes, definitely. A little tip. Add a little Ghost Pepper powder to the breading as well to give it a little extra kick.

    I always was told the spices in the breading are the same as in the Cajun sparkle packets you get from Popeye's .... great video as usual :)

    It’s gotta be bomb with all those spices...I’ve never fried in lard...I’m wondering if it makes a difference in flavor at all...I bet that batter recipe would be bomb on chicken fingers too 👌🙂

    I bet the lard made all the difference in the frying ----- I've changed my perception of lard and tallow, saturated fats like that ( as well as butter) after reading Nina Teicholz's The Big Fat Surprise. Great read. Convinced me to never fry in vegetable/seed oils again at high temperatures because of the oxidation that occurs. Terrible stuff. Anyway I'm tangenting --- great video as always!

      them in beef dripping you will get it from syour local butch’s looks like lard. Great review gu

      Indeed. It's a baby one and will make our life easier and cheaper for certain recipes. The old one is more than double the size and just takes sooooo much oil. We did do deep fried candy bars before and tehy were amazing! Never had a deep fried Oreo. Thank you!!

    Sure hope your are hotter, I love ghost pepper and when I had Popeyes ghost pepper, it had no heat.

    Try adding corn starch or potato starch to the breading mixture. It makes that super crunchy crust that last. Nice one, guys!

      Thanks for the tip, I will try that. It was very crunchy. The texture was just different. Someone said they use Rice Krispies, but after reviewing the ones from Popeye's this evening. It may be cornflakes? What is crazy is I had two managers tell me it was just flour... liars! lol

      @@WhitfieldsFoodRevue it is just flour. The texture comes from the batter. It's really thick once mixed. It's a powder based batter mixed with water.

      I will definitely try that. Still though. There is something in Popeyes mix. I swear after having had the Ghost Peppers wings again tonight from there, I think it's crushed Cornflakes. No joke. It looks a lot like it,

    I wonder if you fried them like good French fries are fried, maybe they’d be flakier? So, par fry them, take them out and let them cool, then finish frying them? You could even re-batter them for the final fry. Although, maybe that’d make them too heavy.

      I actually did do that w/ a second batch we made and it didn't change the texture really at all. I'm telling you something is missing. Almost like it's a batter rather than a dry breading or like I thought it might be after we reviewed the real deal ones. Crushed cornflakes. A long time ago someone said they use Rice Krispies and thought they were crazy... maybe not.

      Whitfield's Food Revue OK, I’m all curious now, so was googling. Two tricks that seem to be important. After marinating, the chicken should be left to come to room temperature before frying (but maybe you did that), and perhaps most importantly, add 1tsp of baking powder, per cup of flour, to the dry ingredients. I don’t know, might be worth a try.
      ALSO, I forgot to say...I really loved the long shot of the lard melting. That was cool.
