Exploring Ehime Japan with Chef Yosuke Suga

- Yosuke Suga - head of SUGALABO, former right hand man to Joel Robuchon, and former Iron Chef France - brought us along with him to explore Ehime prefecture and to hunt for the best citrus and produce Japan has to offer.
Afterward his search, he brought us back to his restaurant in Tokyo, where he showed us how he creates his dishes, and told us the whole point of his laboratory.
Come with us on perhaps the most profound food experience we've ever had. I think what Suga is doing is really special, and I hope we can share that with you in this video.

林爱 yeah they have a radio show on SBS Pop Asia Radio it's an Australian station so I think u can listen live online if you're not in Australia. The way that I listen is through Apple's podcast app. Just search "Eat Your Kimchi" and you will find it. Simon and Martina are really great radio hosts. If you listen to it love you get to hear the music they play. Podcast is just them talking.
林爱 what's really nice is they talk about behind the scenes stuff and expand more on things they make videos about and then they talk about things they don't film at all and talk more about personal experiences and stories. It's really wonderful and I'm so appreciative they choose to share such special moments with Nasties.

Easily, the most beautiful food/cultural video I have ever seen. I've seen a lot of videos, and a lot of food. I'm a 70 year old former video producer, who also ran a test kitchen for a meat company my family owned.. I can't even imagine a better video than this one. Thank you.

I used to hate how slow you guys started to upload but I realize now how amazing the quality of each video is. Every video is a film, a story, an experience, a documentary, a look into your lives, a masterpiece. I hope I can live long enough to enjoy all of what you can offer. Something I noticed too yes! Never been to Japan but in all the videos you see how proud chefs are of their crafts! And use the best ingredient which in most cases are even freshly bought that day, by the chefs. Wish more countries would follow!

Wow this video is so emotional, I can't believe I'm crying over "food". But I think that's why I'm crying - it's not just food. Chef Suga's passion for everything he does in his work is what makes this so... fantastic. I can't find words. The love of each and every ingredient, from the soil it's planted in to the plate it is placed on at his restaurant, it's just immense. So wonderful. Thank you for this video.

I feel like this needs to be submitted to the travel channel or food network or even be promoted as a special on Netflix. I know doing longer and detailed pieces like this are tough, but you do amazing work and I enjoyed every minute of it.
I'm so happy I discovered this channel last week. I'm not even a foodie, but documentaries like these give me such a sense of peace and happiness in the middle of a stressful week! :)

In the same way Yosuke Suga is sharing the feeling of his experiences with his customers through food, you're videos share the feeling of your experiences perfectly. I am in love with all your videos, and especially this one. This video is heavenly.
Oh wow, this video had me drooling! And that's something I unabashedly adore about Japanese culture. The love of local and perfect foods within the average, and not the niche, person. The constant strive for beauty and nature, pure taste and experience, without that strive being chased by religious dogma. It's just... fun! Many of them may not be squealing and jumping for joy while they enjoy what they enjoy, but honestly sometimes I feel like I was born in the wrong culture. Because although they bust ass to achieve these ideals, I love what they love. Subtle broths of seasonal mushrooms, the sweetest glossiest strawberry, cicada's in the summer. A clean street, helping and honoring the elderly. Wooden buildings and lush green nature. I'm honored to live in a world where there is a culture so hell-bent on doing their part to make the world calm and beautiful. We need more of that!
Watching Iron Chef on the couch in USA. Saw they had new episodes of the Japanese Iron Chef showing over here, was so thrilled. Heard "Chef Suga".... and yelled to my husband "wait wait wait... that is the man that ate oranges in the rain with Simon and Martina!"

GOd why do I get so emotional about food?? I dunno why but I think it's amazing when people are passionate about finding the best ingredients and knowing where the food they're cooking has come from and how it's produced. Definitely something I wish more people would consider when buying food here. Thanks so much for sharing this.
I've kind of watched a bunch of their videos when they moved to Japan and I like how they tackled each one. But honestly I think this is one of their best. The musical scoring, transitions, shots and everything else is amazing in this one. More power to you guys

So I'm tuckered from closing at work and just had a lovely shower--and I love that I get to relax and watch this work ethic and mentality and the damn beauty of the entirety of this video. I built this lovely, happy, buzz while watching it. While I may be far away, wishing I could experience and taste these things in person, this is a treat. I'm so happy that you guys get to do this type of work and have found these sweet invites/relationships where these chefs dig you, have taken interest in your work, and open up and trust you with sharing their passion and art. That alone is so, so, cool. A reminder of the better/wonderful possibilities in life.

You know what really intrigues me? The chef had a french accent which means he's a native japanese speaker who learned english in France.
Videos like this is what makes me want to go travel. Not just to discover food but also the people who put love and hardwork to masterpieces be it fresh or on the plate.

Woah chef Suga has such a passion for cooking. This was a really great video, the story told by the chef and the story you told visually. You guys rock. Also, Martina I think Simon has been taking notes, his food critique game is on a other level. And he's obviously the rock skipping champion. Can't wait to see what else you guys have in store for us.

Just to be fair, some of the kitchens shown on Chef Tables are not open concept or for show. Don't knock it just because it isnt an open kitchen like Sugalabo.
Those kitchens are absolutely beautiful and better than any kitchen that I have ever worked in. I simply used them as the gold standard and said that this kitchen in this video was even more impressive. Definitely never meant to knock them in any way.

I just have to say that this video is so beautifully edited and put together. I love the silly videos with the soundbites and graphics, but for the subject matter this was really on point. The fonts used were like something off a menu or a chalkboard outside of a high end restaurant or cafe. All the little hearts and doodles weren't distracting from the key point and blended the tone of your videos with a really mature and beautiful story about the journey from ingredients to the table. I'd love to see more features like this.
Normally I don't add comments on videos. I'm just so shy and quite. However. I love food. I love the passion behind it. I love how complex or simple one meal can be and savoring the moment is magnificent. And this video was so amazing I cried. Just this was perfect.

Simon and Martina, two of very few people that makes me emotional about food. Everything about this video, the edit, the soundtrack, the clips from being at the farms, then back at the restaurant, then listening to what this amazing chef has to say, the way you guys express yourselves eating food, every-THANG was perfect. I have found so much enjoyment watching your channel and learning about Korean and Japanese culture with you guys.

Thank you for sharing your experience with us, I was getting emotional listening to Martina describe her memory and then watching her get to relive it through the plate. Japan is not only about Tokyo. if you plan a trip to Japan, do yourself a favor and go outside of Tokyo. last year, we went to Matsumoto, and it was another experience. We had the chance to talk with locals about pretty much, anything. Simon is soooo rright. Tokyo is nice, but all the country have something to offer.
Ok, I started crying when Martina was talking about her walk to the orange tree, I remember her mentioning it in her depression video. Definitely can hear the passion and love in her voice. Everytime I look at an orange I'll think of her hike up the mountain& her never giving up.

As someone who lives in the backwoods of Japan and has fallen in love with my obscure prefecture, thank you so much for putting a spotlight on the beauty and gastronomy of the country outside of Tokyo. Sure it is a wonderful metropolis, but I appreciate that you have recognized that it is not the "end all, be all" of Japan.
In addition, Ehime is awesome! It is one of my favorite prefectures I have visited and it is so gorgeous.

The cinematography of this video was beautiful, and not only that but the vibes were so pure, and happy, and nostalgic. Watching this has made me want to get into culinary school when i go to college.
Dekopon is the best citrus? I politely say no, but I am an Ehime local. There are 3 citrus you should eat. Beni-Madonna, Setoka, and Kanpei. These are 3 best citrus in the world.
+Ryosuke Ito we actually ate all three of those as well! The Beni-Madonna had the most surprising texture I've ever eaten in an orange 🍊 and for the final dessert Chef Suga made it included over 10 varieties of Ehime oranges so each bite was a little different. Ehime is so lovely, you must be proud to be from such a great region!
I think Simon told Martina to try the kanpei.
Listening to Martina talk about her memory of eating the orange as it started to rain and watching the trip through her eyes whilst remembering her reference to the trip in her depression video totally touched me and made me cry. Was there ever such a beautiful spirit as Martina?

What an utterly beautiful video. The footage, the editing, the stories, the message, each one of these could probably make me cry on their own but the way you guys put this together really warms my heart in such a primal way. In the same way Chef Robuchon described his hopes for his food, I can see already that this is a video that I will keep experiencing even after the end scene.

It was just so beautifully done, from the way you handled the story-telling, to the camera work (shoutout to the rolling orange and Martina and Simon walking through the orange field at the end), and how you mashed everyone's perspective to make it so warm, homely, you made it feel like a real cozy place, and everyone was just so happy about doing this, and doing what they wanted, and you guys being so child-like happy and enjoying everything, from the produce to the places you visited. It was amazing, thank you so much.
