My 2 year old likes to watch your daughter Sam and tries to talk to her and play through the screen. My daughter has a speech delay so every time Sam talks my Daughter Alayah repeats her.
That's a good point about making butter, everyone should try it once. You just need a jar and some heavy cream (the higher the fat content the better). Fill the jar a little over halfway and shake vigorously until you have a clump of butter form leaving buttermilk as the byproduct.

At my family sugar shack we used Butter when the foam started to rise and it works amazing! Also my grandfather always told me if we didn’t had a thermometer you dip a spoon in the syrup and if you see 3 drops forming instead of 1 then its ready

On the speak of bears...I left one pail in the woods by accident one a few seasons ago and found it later in the summer 500 meters from the tap, covered in bear tooth marks! All I could imagine is a bear who just got up from hibernation drinking fermented maple sap on an empty stomach! Uh oh!!!

That syrup looks GORGEOUS, It's a beautiful colour and pure clear. For sure it was worth bringing all the buckets of sap in out of the cold, rather than chance losing it. It is Thursday evening here in Eastern Ontario in the last 24 hrs our weather has been constantly changing snow for a few hrs then Ice rain Pouring rain this morning changed to heavy snow storm around 7 for all day turned back to ice rain this evening I think I'll stay in bed till spring colour of syrup is awesome
Looking good the maple Syrup, everything tastes better home made Here in Priceville where i live the family just up the road has hens there daughter is suppose to be looking after the hens and sells the eggs, $4.00 a dozen, we used to get colored eggs green,blue , they lost some hens they got new ones , no colored ones this time all brown

Keep your eyes open for a reverse osmosis (RO) machine and then boil the product coming out of it's drain port you'll have 80% water reduction in the sap. It brings the boiling time down to less than quarter of the time. I use a steam kettle and my gas cost of 2019 crop was 72% less than 2018 crop and i made 10 more gallons. Plus as a bonus we enjoy the maple flavored water coming out the purified side of the machine. Anyways good luck happy sappin!!

Hey Jeremy, quick tip, a tiny sliver of butter is a great defoaming agent. If you are going to use coffee mate, don't read the ingredients. I'm not an expert, I only do about 5 or 6 gals per year for friends and family, but I've been making syrup for 40 years and have always used butter. In either case good job, I'll bet you guys will be hooked on making syrup from now on.

I mentioned using a jar filled just over halfway with heavy cream (the higher the fat content the better)and shake vigorously until you have a clump of butter and some buttermilk. Keep in mind it will also be unsalted unless you add salt. It's something everyone should try at least once especially with children so they can see how to make butter without any special equipment like a churn. The way it works is as you shake the fat gets damaged and sticks together separating from the "milk" aka buttermilk. You may already know about this but I figured someone may want to try it with their kids so I made a separate post to make sure you also see it.
How long did you boil the sap few gallons in the pot from Start to Finish too have the Maple Syrup where you can eat it. Comment. It Has too be good if Sam gave it a big Thumbs Up. Sam is so sweet and Adorable. God Bless Y'All.

Use butter it will help with the foam. And use butter in your jam to stop the foaming when you can your own.
The old fella I bought the maple syrup evaporator from swears by the coffee creamer and prefers it to butter :)

If you shake the creamer on with a sifter screen so it more evenly dusts the top of the foam it should work a little better.
