Tangzhong method works wonders for making toast bread. It causes toast to be crunchy on the outside keeping the inside soft. I'm definitely trying the Wool Roll Bread soon. Looks so mouthwatering.

If your kitchen is not warm enough or you have a curious pet and can’t leave the rising dough on the counter, you can turn on the oven light, and place your dough, covered with plastic wrap, in the oven. The light brings the temp to a nice, warm 80 degrees.
If you want to go next level with your tangzhong, Google Cleobuttera ultimate cinnamon rolls. Blows away every other recipe, INCLUDING King Arthur Flour, which shocked the hell outta me. Because those people KNOW what they are doing, man, and Cleobuttera is STILL BETTER.
The biggest problem with pieces of dried fruit in baked goods is that they frequently look like chocolate chips at a glance. If not for that thought association and false promise, most people would probably appreciate them. I prefer chocolate, but dried fruit is an appreciated change of pace and I'd take it over no stuffing any day of the week.

Love this idea! So versatile for Christmas , Easter , all holidays or just to impress the heck out of your guests. Thank you chef John you are the best!

The Maryland Sheep & Wool Festival online is this week. Thanks for the timely post, Chef John.
