we use those beans in middle eastern cuisine tons! we have a no vegan dish where you would tear up flat bread, put it at the bottom of the bowl, put some fresh cooked lupin beans with some of the water on top, layer it on top with some melted butter and an omelette and then finally a fresh layer of tomato, onion and coriander salsa.
vegan jello can be made using agar powder as well! it is originated from algae. some asian cuisine uses agar agar and it can sometimes be found in asian markets.

Noémie Hotte lecithin is found in a lot of foods naturally. Most companies use soy lecithin though. I'd say unless it says where the lecithin is derived from, just stay away from it.

in ecuador you will see all types of snacks with yuca/kazzava, various beans, dried fruits ... more healthy snacks then in canada or the usa

you can get a lot of this stuff at italian markets... like the dried fruit and lupini beans! and they sell cassava chips at bulk barn
