I have always disliked those baking creations which are overly colorful. They are just a pain in the eye to look at. However, your triple rainbow cake is so clean and beautiful, and using only white cakes is such a clever choice! I love this!

Just made this cake a few days ago and my daughter absolutely loved it! But instead of piping the rainbow buttercream in between the layers, I did a Chinese-style cream&fruit filling instead (less sweet) and everyone loved it! :)

Hi Jemma, did you remove the coloured buttercream from the bags to spread round the cake with the cranked palette knife? Would it be possible to pipe the b’cream onto the side/edge of the cake and then scraping smooth? Love your Rainbow cake btw. I’ve followed you on UA-cam for a year now, bought your book etc, and my family now seem to have appointed me as senior birthday cake maker! So I’m making (going to try at least) this for my Granddaughter’s 6th birthday party this weekend. If it looks half as good as yours I’ll consider that a success!

Because if you just used the piping bag you may get more icing then you need and the icing would simply blend together because it would be too heavy, but if you use the pallet knife and press it on you have complete control! But good idea x

I’ve seen where you’ve used Swiss meringue on some cakes and vanilla buttercream on others. When do you use which kind? I’ve made several cakes with Swiss meringue but some people say it’s too soft and creamy so I’m having trouble with deciding which to use. Specifically for a tiered cake
LOVE IT! It looks like the red and purple buttercream has split, i always finds this happens when adding gel colour - is there a way of stopping it happening?
When making a layer cake, is it ok to bake it in two batches? I've only got 2 8inch tins, so was wondering if baking two layers, then refilling the tins and baking the other two after would ruin the batter since it would be left standing for a while?
Now, how cool is that?! I'd love to make it but my main problem when it comes to buttercream is to get it WHITE. It's always slightly on the yellow side and it irritates me that I don't seem to be able to make it as pale as I want it.It messes up other colours!
Eva Sjöberg you have to whip everything for a very long time in order to get that very white opaque color. With the butter by itself for a good 5 minutes then add and everything else and whipped with each addition for an additional 3 minutes for each thing she teaches that in her buttercream video if you watch that she explains how she gets her white color at c&d
Eva Sjöberg How do you whip your B.cream? Hand whisk or standing? It might also be what you use, because if its margerine you will never get that white. Gemma has a full buttercream masterclass as a youtube video - hope this helps x

If you make a shorter cake, you could only apply the primaries then blend them with the scraper and kind of make an ombre.
