- Autumn is a fantastic time to make the most of the bountiful harvests and preserve the glut into the winter months. Autumn chutney is one of my favourite recipes and in this video we’ll harvest a few crops and I’ll show you how I cook it with plenty of preserving and jarrings tips

The original chutney of India (Hindi: chatni) was usually a relish made from fresh fruits and spices. During the colonial era the British took it home (along with curry dishes) to their Island, and thence to their other colonial possessions, including South Africa and the Caribbean Islands. It wasn't till I moved to Canada 30 years ago, that I realized just how much British food was influenced by places like India. Cheese and pickle sandwiches are unheard of here :(((( Loved the video.

I just made this earlier today. I halved the recipe as i wanted to make a first batch and not all the tomatoes are ready.
I read the comments on the website and used half muscavdo and half white sugar. Wasn't until later that i saw that if you add the sugar in later, it retains the red colour more but hey ho.
I didn't know what variety of cooking apples to use as some said that bramley wasn't tart enough but seeing as that is the only one i know, that is the one i used.
I also used the big flame raisins as that was what was in the cupboard.
I managed to fill a medium sized Mayo jar and a little mustard and horseradish jars with the regular chutney and a marmalade jar with some cayenne pepper.
Thank you for posting this! It can be quite daunting making this sort of thing but most of the work as you said was preparing the ingredients. Really easy, just takes time near the stove.
I killed two birds with one stone and took the opportunity to simmer some dry red kidney beans to freeze.
Having looked into it more i want to use up the rest of the ginger knob by using the last of the rhubarb into a preserve jam.
I have another knob of ginger so i might try sticking in a window box. If it is too late, i might use some for a herbal tea mix and the rest for like a preserve. (Have you tried Asda's Ginger Preserve? It's like marmalade and awesome on crumpets! )
I also want to make a caramelised red onion chutney.
We go hard on cheese and biscuits here at Christmas! lol
When the mother in law had the old house, she used to make plum chutney from her tree and it was gorgeous! Knowing how easy it is i can hopefully take up the reign in the preserve and chutney gifts!
Hey - if it helps with your ginger it freezes well for grating then just grab it out of the freezer and grate it while still frozen using a microplane. Not great for any application where you need chunks of ginger as the cell structure breaks down when it defrosts but its perfect for grating

Really enjoyed your video and I hope you continue to do more like it. Everyone knows that the harvesting of what you grow is important but then you have to do something with all that produce including turning it into other recipes like chutneys. Also, your apple tree looks to be in excellent health. It shows all the hard work you put into it.

My former mother in law makes the best apple butter, and I made a tomato jelly/jam years ago that was really very good, the tomato jam had a nice honey favor too. You're so right about extended the harvest with preserving what you can. A show I watched yrs ago the lady dehydrated strawberries, they went on a winter ice fishing trip and she hydrated them and they looked fresh picked, and they all said they tasted just picked. Thanks for the shout out about that cookbook too.

Looks delicious! I love preserving in the autumn as much as growing in the spring. I did beetroot and caramelised onion chutney yesterday, will be doing a beetroot and apple, tomato and apple and a chilli tomato one this week too. Plus I've got a garage full of apples to make cider and I'm trying a rhubarb and strawberry wine this year too. There's something so satisfying about creating amazing recipes that have mostly come from your garden!

I am back again to make these. Our tomatoes came early and in full force this year. I plan to also make tomato chutney, canned tomato, basil and oregano and cream of tomato soup, which i can freeze.

Thanks for the great video. I make chutney every year and am always looking for variations to try. This was my first year growing peppers. Wish I had thought to put them in the chutney, but I did make some chili jam which is nice.

We have a lot of green tomatoes in the garden that won' be ripening as cool weather has set in so will try the chutney recipe, it looks delicious

Going to give that a go. I’ve always used green tomatoes and added garam masala (quartre epice she called it) . It was my grans recipe she used malt vinegar but I use red wine vinegar. Then pretty much as yours. All the tomatoes ripened this year so good chance to use the ripe ones as well as drying them in the oven.
Hello! I got mini tomatoes (obviously that is the final harvest in this season) from my vegetable field today. And I have just finished cooking, this is my first time cooking chutney. I'm looking forward to opening a jar. Thank you for sharing! Smells good👍
I just made a double batch the other day and had it tonight with a smoked cheese and pear grilled cheese. They went great together. I added some currants as well as raisins and I water bathed my chutney for 10 minutes (mostly just following Canadian guidelines). Thanks so much for the great recipe.
I like the different video, it is in keeping with harvesting produce and how you use it. Thanks for sharing. I started making more jam during lockdown her in Sydney using produce given to me by neighbours. Lime and Lemon, Mandarin, Tangello and personalised the labels to include 'Albert's Lemons etc. Shared a jar with a group of neighbours which in turn gave me more fruit to make more marmalade!

Perhaps, but you have extended your audience to those who can't grow their own but receive the fruits of neighbours' gardens thus allowing them to make good chutneys and preserves which they in turn can share with neighbours and friends. Chutney is actually from India. U must try the sweet and sour lemon pickle. It’s yummy. I am def. Going to try the Apple chutney.

My wife (who’s ancestry is Anglican) made us a chutney years ago, it was sweet and spicy. I might need to look into another try.
My ancestry is more into salsas, which is how I preserved my tomato harvest. It’s been freezing last few nights, so harvested the tomatoes outside the greenhouse in the wicking beds. Didn’t have enough chiles though, so the salsas are mild to medium spicy, but sweet (the golden nugget tomatoes are allegedly the sweetest and the tomatoes which sprouted vigorously this year).
I just planted my fruit trees so it may be a few years before any harvest. I am slowly expanding my garden trying to calibrate what I can maintain with my rain catchment, we live in a desert.

Well done you on a fantastic 'harvest preserving' video! I make chutney's and one of my my favorite 'blends' includes chyavanaprasha, an Ayervedic medicinal recipe of 50 spices and herbs with a very complex flavor. Most people don't know that spices are antioxidant powerhouses, outperforming vitamin C on the ORAC scale. The other nice thing about chutney's, preserves and ferments is you don't need to be concerned about the 'appearance' of your fresh ingredients. Cheers...
My favorite chutney is a sweet tomato chutney by Madhur Jaffrey, from her book Eastern Vegetarian Cooking, it has lots of garlic in it and flavoured with fenugreek and ginger. I make it every year, So yum!

My wife does what's called a fruit ketchup which is very similar to your autumn chutney....very tasty!
A tip I was given was to dissolve the sugar in the vinegar first because it helps to reduce the risk of the chutney sticking to the bottom of the pan while it's simmering.
Looks good. I make rhubarb chutney because I always have masses.
Great Video thanks for sharing your recipe! I love making zucchini pickle it's perfect for using up zucchinis as theres always to many! It has onion and capsicum in it aswell really nice with cheese. The Indian one sounds amazing will definitely give that one ago! I'd also like to find a good recipe for a chilli and tomato chutney. I preserve my jams and chutneys the same method as you with clean hot jars from the oven my Grandma has done it the same way for many years.
