Near Udon Thani you can also visit the former house of Ho Chi Minh where he previously lived in exile. Quite a large diaspora of ethnic Vietnamese in the region.
Just two comments. Never knew that Banh Mi could be that crispy, and that sure looked and sounded delicious. The Banh Cuon was something special. It's been many decades, but I still miss being able to get dishes like that every day. And you're up in the area of Thailand that made the most impression on me back in those days. Thanks for finally getting to Isaan. Did you ever get to Surin also?
Banh Mi’s look amazing! When i lived in Bangkok (2013 - 2017) there was amazing Banh mi place called Banh mi Bo on Sukumvit 33/ 1 that were incredible. They also sold amazing summer rolls and Vietnamese coffee. Anyway love your content! I hope you and your family have a lovely Christmas and new year. P.s where do you get your haircut in Bangkok? 👌☺️
On my itinerary for next trip to Thailand. Best of both worlds: Thailand and Vietnam in one world. I’m convinced my marriage to my Thai husband was predestined by God. Our cultures have been weaved together before we met. The food looks authentic and legit. The pickles should be sour with a touch of sweet only as you described. Vietnamese food gets sweeter in the past 15-20 years which I don’t like. It didn’t taste like that when I was growing up in Vietnam many years ago. FYI, Vietnamese overseas are the ones preserve the authenticity of food and language according to some Vietnamese scholars and I found it to be true. Gary, you’re having the best experience as if traveling back to time. Enjoy
I think I petered out visiting Thailand, until I view a food video and committed for another try. I did visit Udon on trip before last and scootered to national park with rock formations that blows the mind..I stayed within walking distance of towns central market and forced to eat outside my comfort zone. I( taste buds almost ripe for the acquired taste.

I know it's controversial, but, if you order a well done filet of beef, then so be it. That's how you enjoy it. I'll make you the best tasting well done filet you have ever had. You're buying, you enjoy it. Anyone who says otherwise is just a snob and deserves no respect.
