My wife has a couple of different sized bowls same as you marinated the chops in nicking one and cutting the bottom out for a kettle cone might work, Quick fix maybe if it takes the heat...? Will try tomorrow.

The bowl will sort of work, the still produce radiant heat that can burn the food closest to it, as the Kettle Kone is a thicker mild steel it absorbs that heat more. You'll also need more than 3/4 of a chimney to fuel the bowl, again as the kettle Kone is thick mild steel and acts like a heat sync and therefore relies on less fuel to get hot. 🍻

Give me a mid-loin chop, or as my Mrs calls them (curly tail chops) over a cutlet any day. I do them the same as you & they are always "moist" !! LOL Cheers !!
