I have a recommendation: when you eat sweeter Thai dishes like Pa-lo (พะโล้) and Panang, try throwing some chillies soaked in fish sauce (the condiment they gave you) on top, it cuts the sweetness quite nicely. Pa-lo, the darkened broth dish with hard-boiled eggs and pork bellies, can be made with Chinese spices (cinnamon and star anise, for example). Its origin is Taechew, China. The Thai version usually uses spices like coriander roots and whole black peppers. If the dish is super sweet, it could’ve been made with instant Pa-lo powder (eg. flavored bouillon).
I was there some weeks ago, I took regular pork level 5 (the spiciest) and the second time wagyu shank (level 5 too) I eat super spicy every day so for me level 5 is the only way to go. It was super spicy and tasty. I loved it. Wagyu shank was a bit chewy but very good too , I really loved the pork . If I lived in the area I would go there at least once every 2 weeks lol
