These 4 dishes are a perfect example of how adding or swapping just ONE ingredient can completely change a dish. With that in mind, while it’s ok to swap bacon or pancetta for the more traditional guanciale, just know that you are tasting a different dish. Still tasty, just different.

It's funny because the fewer ingredients, the harder it is because it usually requires better technique, while having more does offset it a bit, and makes it possible to cover

I made Pasta Amatriciana for date night with my partner after seeing this video. I made homemade pasta and sauce and everything. So glad I got to see her smile after the first bite. Cooking brings people together, i suppose! :)

@@federicocavalli1722 The only thing you see is cheese on which "parmi(?) reggiano" is written, so parmiggiano reggiano and not pecorino romano. Did you really watch it or are you only talking out of your a*s ?

Grazie Mille. Yeah. Haha. Those are the same ones who can only recognize Parmesan from the rind and didn't realize that pecorino Romano was on top... hahaha. It's funny because I made a video ONLY using pecorino and a bunch of people got mad and said the better way is to use a blend. You can never win. 🤷♂️

I mean, some old cooking recipes also tell you to combine pecorino and parmesan in half equal doses of what either of em would be stand-alone. But either way, anyone chooses their preferred way to make it overall!

Now im learning all the itallian names ,recipes, where to get ingredients etc... As a kid i was glad to just have spaghetti, which meant overcooked spaghetti with ketchup and sliced sausage.

@@d15t0rted4yeah ignore that. Not sure what the other commenter is on about, but this video is accurate. Hope you are finding some great places to eat! Rome is full of amazing food. Be sure to try some real Roman style pizza too and enjoy the amazing pastries at local bakeries. Stay away from the tourist areas when you're looking to eat and you're guaranteed to find great food. Trip Advisor is great for finding places, look for reviews from locals or just ask the locals, they're usually super helpful and happy to share their favorite restaurants. I recently returned from my stay in Rome, it was absolutely amazing. Enjoy it!

He means roman as in the city of Rome, not the ancient Romans. Rome still exists today

Carbonara - real carbonara with just cheese, egg, and meat - is my absolute favorite pasta preparation. Once I learned to make that, I felt like I pretty much never need to make any other style of pasta.
Cacio e Pepe was actually the inspiration for what is called Alfredo. Just different noodles and no peper corn.
Carbonara all day, i spent about a year learning to make it right 😂 heaven. I toss in a steel bowl at the end

name origins:
"Cacio e pepe" just means cheese and pepper
"Gricia" comes from "Gricio", which is someone selling food from the Swiss Grisons
"Carbonara" ;The recipe and name is most likely from when WWII american soldiers tried the "Cacio e ova" (which means cheese and eggs) from Abruzzo made by charcoal burners (Carbonai)
"Amatriciana" comes from Amatrice, and the people from that city went to Rome and were really good at making food

Italian food reminds me of Mexican food in the fact that except for a few more dishes there is 1 ingredient that can be called different names. Mexicans= tortillas base( flautas, tacos, sopes, etc) Italy=pasta is base just make a sauce and call it different names

Initially I thought this was about pastas the Romans ate , I was so confused with the last one
Gricia and Amatriciana are from Amatrice, in the province of Rieti.
100% aligned with you and your ranking. Amatriciana really has a thing, it is excellent and probably the fat of the guanciale gets more revealed and balanced in the tomatoes and with the kick of the chili.
Then Gricia is excellent in its simplicity. Carbonara is very good for sure but unnecessarily fat and heavy. Cacio e pepe is less interesting than the ones with guanciale, for sure.
But these four Roman / Lazio pasta dishes are legendary!!!

Also, these are pastas of Rome, which is central italy. My family is from the far south where cuisine is different at times(i.e. even better). I've only actually had 2 of those 4 (partially cos my mum is vegeterian). In my opinion, the south's specialty is taking all kinds of vegetables and herbs, and making them taste the best they possibly ever could. It's why life expectancy is so high down there, veg tastes so good everyone is healthy

These are among the dishes that cross the regional boundaries in Italy 😊 you seem to be referring to cucina povera, peasant cuisine, which is typical of all of Italy, not exclusively the South. In my opinion it wouldn't make sense to put one regional cuisine on a pedestal over the others, they're all delicious with their own perks.
@@gnamorfra They're popular throughout but roman in origin and cucina povera is mainly southern as the south was traditionally the poor farming area.
For the record I wasn't saying it's objectively better. That's just my opinion as I have grown up with it every holiday and prefer it to most of the meat based meals.
My all time favourite is my nonna's vegetable lasagna/pasta al forno😋

Cucina povera Is absolutely not Southern Italy's exclusive prerogative, as North, Centre and South all used to have pockets of poverty and farming areas. Even one more reason why the Northern and Central Italian cuisines are rich in peasant food, with plenty of vegetables, legumes, herbs, and so on. Maybe you're not familiar with those dishes? I love lasagne too, both with ragù and with pesto 😊💪

Pancetta is at least similarly cured, just not as rich or spiced as guanciale. I love bacon, but it totally changes the flavor and is not a good substitute in my opinion.
