It's actually refreshing seeing someone take their time to talk about their food in such a classy and elegant manner. Nowadays it seems like everyone is on a rush to through as many ingredients as they can into their pans or cooking boards and it's just so tiring and uninteresting. The editing skills for those videos must be awesome, but what's with the rush? Like calm down a bit and let us enjoy the cooking. And it's not that I'm old and can't keep up with the videos, I'm just 27. But I remember the cooking shows I grew up with in the tv in the early 2000s and you do miss the love some of those men and women had for what they were doing.

I made Pasta Amatriciana for date night with my partner after seeing this video. I made homemade pasta and sauce and everything. So glad I got to see her smile after the first bite. Cooking brings people together, i suppose! :)
Many a man would be surprised on how many women love it when a man can cook- ....and not just the ability to throw a frozen piece off fish in the microwave and stuff it between two piece of bread....but the ability to make a specialty dish such as one of these in the presentation that put's a smile on a woman's face
I made pasta alla amatriciana in the third date (but I threw in too much pepper chili as a mistake/revenge for her too spicy gulash). Now we are married with 3 kids.
It's funny because the fewer ingredients, the harder it is because it usually requires better technique, while having more does offset it a bit, and makes it possible to cover

I mean, some old cooking recipes also tell you to combine pecorino and parmesan in half equal doses of what either of em would be stand-alone. But either way, anyone chooses their preferred way to make it overall!

First time I ever had carbonara was actually in london (hear me out) at this small italian resturaunt, owned and run by an italian immigrant. He took our orders personally and he went back into the kitchen himself to cook. There was a window so people could kinda see into the kitchen, and Ive never been more stoked for a meal watching him make that dish for me. Best pasta I had ever eaten, hands down. I wish I could remember his name, or at least the name of the place
I had carbonara for the first time when I went to Rome and I dream about that dish it was so good. Probably the best thing I ate on that trip next to the cannolis in Sicily

The longer I cook at home the more I appreciate simple pasta dishes like these. It's not always a toss up between a red sauce and a white sauce like when I was a kid.
I can recommend dried mushrooms if you ever need to toss something together. I store them in jars. When you need them: 🍄 take a hand full and toss them in hot water for 10 min. 🍄 Take them out of the water and squeez the water out 🍄 Sear them with some butter, onions and garlic 🍄 When they are as brown as u like add the mushroom water and reduce the broth 🍄 Toss the spaghettis in and put some Parmesan over it
There wold also be the "Zozzona", which we could translate as "the dirty one", it's with: pecorino, pepper, chili powder, guanciale, sausage, egg yolk and tomato sauce

In the 1700s rich British men would tour Italy as a stylish cultural experience and brought bac Macaroni as one of their favorite treats. These men were often derisively called "Macaronis" which is where the line in Yankee Doodle Dandy came from.

The one thing I respect about Italian foods and Italian traditional chefs is that they protect the integrity of the simplicity of the dish. It tastes great with simple fresh ingredients. No need for excess or clutter

Be sure to try some real Roman style pizza too and enjoy the amazing pastries at local bakeries. Stay away from the tourist areas when you're looking to eat and you're guaranteed to find great food. Trip Advisor is great for finding places, look for reviews from locals or just ask the locals, they're usually super helpful and happy to share their favorite restaurants. I recently returned from my stay in Rome, it was absolutely amazing. Enjoy it!

Cacio e pepe is the greatest pasta dish I've ever had. I had it once and was determined to learn how to make it for myself. Finally got it down so I could be consistent with the quality. Invited a friend that was visiting from Italy to give it a try and he told me to move to Rome so I could make it there. Best compliment I've ever been given.
Great posting. Wonderful dishes. My tip for the first is to lightly dry roast the whole black peppercorns prior to grinding. And of course in all cases to reduce the amount of water in the pasta. The starch laden pasta water is absolute key.
all four look great! i myself can only make cacio e pepe since its a dish at the restaurant i work at and it does take a bit of finesse to get it right even though its so simple!
Cacio e Pepe will always be number one for me. My grandmother always made this for me as a kid because I wasn’t a huge fan of sauce as much then. If anyone else tried to make it, I would it eat it. Had to be grandma.
I am Italian. Born and grew up in Rome. This Is a perfect description. Be aware that the canonical Amatriciana has no Peperoncino. Also note that the type of pasta you use in relevant. For Gricia and Carbonara short pastas are Better.

Amatriciana is the best. Making it myself for the first time this weekend. Tried it for the first time in Rome earlier this year and I can’t believe it’s not more popular in the states. I’d never heard of it or seen it on a menu before going to Italy at 33 years of age.
When my family went to Rome 5 years ago, we fell in love with cacio e pepe. My dad practiced until he could make it with no mistakes, and it became something we ate often since it was so simple and good. This is my first semester in college, away from home, and it's one of the meals I miss most. I haven't found any good Italian places near me yet, and the cafeteria Italian food is pretty bad in general. I may have to learn to make it myself, even tho cooking in the dorm kitchen is kinda annoying.
1. Amatriciana 2. Carbonara 3. Alla Gricia 4. Cacio e Pepe Takes a lot of practice to get any one of these right but amatriciana is the easiest to make, I concur 100%.
As Italian, my personal ranking is: 1 gricia 2 amatriciana 3 cacio e pepe 4 carbonara very very good video tho, respectful of Italian traditions and smart way to make it intended abroad. 👏👏👏
Italian from Rome here: Not actually an old recipie as the main four pastas but there's an honorable mention in the Roman pasta pantheon! It's called "Pasta alla Zozzona", which is basically the "illegitimate child" of carbonara and amatriciana mixing the eggs with the tomatoes, plus a little bit of pork sausages (some use the sausages, some don't, the main twist is the tomato-egg-thing). "Zozzo" (Roman dialect for Sozzo) in Italian means "dirty", but considering the "Zozzona" context it actually means "greasy" Not the lightest thing i could think of, but it's quite the experience
I love Rome. We've met a couple of times over three decades, but 2008 I fell head over heels in love withe the city. I know the påstås and it is hard to say which one I love more. Nel fin fine I'd say Carbonara. ❤
Amatriciana and gricia are from Amatrice, a town that before 1920 was actually in Abruzzo region, the dish is form late 800 so they are two abruzzesi dishes!

I grew up eating all of them and by far my favorite is "pasta all'amatriciana". So many good memories. Such a delicious dish.

Amatriciana is the best. Making it myself for the first time this weekend. Tried it for the first time in Rome earlier this year and I can’t believe it’s not more popular in the states. I’d never heard of it or seen it on a menu before going to Italy at 33 years of age.

Amatriciana is such a lovely easy recipe. For a meal I prefer something with more vegetables, it's a nice meal if you want something quick and easy.

When my family went to Rome 5 years ago, we fell in love with cacio e pepe. My dad practiced until he could make it with no mistakes, and it became something we ate often since it was so simple and good. This is my first semester in college, away from home, and it's one of the meals I miss most. I haven't found any good Italian places near me yet, and the cafeteria Italian food is pretty bad in general. I may have to learn to make it myself, even tho cooking in the dorm kitchen is kinda annoying.
If you have a good cooking thermometer, you can make all these pasta dishes in a microwave. No kidding.

Not actually an old recipie as the main four pastas but there's an honorable mention in the Roman pasta pantheon!
It's called "Pasta alla Zozzona", which is basically the "illegitimate child" of carbonara and amatriciana mixing the eggs with the tomatoes, plus a little bit of pork sausages (some use the sausages, some don't, the main twist is the tomato-egg-thing).
"Zozzo" (Roman dialect for Sozzo) in Italian means "dirty", but considering the "Zozzona" context it actually means "greasy"

Amatriciana and gricia are from Amatrice, a town that before 1920 was actually in Abruzzo region, the dish is form late 800 so they are two abruzzesi dishes!
Was just in Rome three days ago and can confirm Cacio e Pepe is DIVINE
