    碱水糕
    ~马六甲椰糖 - 185g
    ~水 - 30ml
    ~班兰叶 - 2~3 叶
    ~椰奶 - 150ml
    ~粘米粉 - 200g
    ~水 - 800ml
    ~盐 - 1 茶匙
    ~硼砂 - 3g
    ~碱水 - 1 茶匙
    ~食品级黄色 - 个人喜好
    1) 马六甲椰糖这里我用半颗,大概185g, 切成小块,这样溶解, 加入椰糖,再加入少许水(大概 30ml), 小火慢煮, 必须不停的搅拌,不然会烧焦, 加入班兰叶, 起泡后,加入椰奶,搅拌至椰糖开始浓稠, 关火待凉
    2) 水中加入班兰叶, 预热蒸锅, 我这里是用阿嘛的方法,用小碗来蒸碱水糕, 碗放入一起预热
    3) 粘米粉过筛, 加入水,水分为3次加入,搅拌均匀 + 盐 +硼砂, 加入硼砂会让碱水糕更弹牙,不喜欢可以省略 + 碱水, 放入碱水后,开始微黄色了, 也可以加入少许食品级黄色, 也可以省份, 搅拌均匀后,过筛倒入锅中, 小火慢煮,不停搅拌, 当中会结块,用汤匙弄散它, 开始变浓稠了,可以关火,不过还要继续搅, 搅拌至滑顺, 可以放入预热蒸锅了, 大概9~10碗, 括平表面, 我这里是用小碗来蒸,30分钟即可,
    如果用大烤盘来蒸,就必须蒸1小时, 蒸30分钟, 待凉才可脱模, 享用时加入椰糖
    Alkaline Rice Cake
    ~Gula Melaka - 185g
    ~Water - 30ml
    ~Pandan leaves - 2~3 pcs
    ~Coconut Milk - 150ml
    ~Rice flour - 200g
    ~Water - 800ml
    ~Salt - 1 teaspoon
    ~Borax - 3g
    ~Alkaline water - 1 teaspoon
    ~Food gred yellow color - own favorite
    1) Gula Melaka we use half, about 185g, Cut into small pieces, more easy to melt, Add gula Melaka, add some water (about 30ml), Low heat slow cook, Keep on stirring, avoid burn, Add pandan leaves, After boiling, add coconut milk, Stir until palm sugar begins to thicken, Turn off the gas, keep cooling
    2) Add pandan leaves at the water, preheat steamer, Here i follow my grandma method, use small bowl to steamed the rice cake, Preheat the bowl together with the steamer
    3) Sifted the rice flour, Add water, divide in 3 time add in, mix well + Salt + borax, Add borax make rice cake more elastic, can be left if don't like + alkaline water, After add alkaline water, batter turn slightly yellow, Can add some food gred coloring, can be
    left if don't like, After mix well, sifted into the pan, Low heat, keep stirring, It will clump up and scatter it with a spoon, Went starts thicken, you can turn off the heat, but continue to stir, Stir until smooth, Pour to preheat steamer, About 9~10 bowl, Flaten the surface, Myself steaming in a small bowl , steamed time
    is 30 minutes, If steamed in a large baking tray
    it must be steamed for 1 hour, Steamed 30 minutes, Keep cooling, after cooling remove from bowl, Add palm sugar went u served

      硼砂可以省略,这是我阿嫲的食谱,硼砂会让碱水糕有Q弹的口感!如果不喜欢可以不放!
