Just watched the how to clean vid and now this one. Both very good and helpful videos. Really like that flanged pot/pan, placing the fish on the flange (with it's heat) when it comes out of the oil helps to drain more oil.
Hell yeah this guy is a real man! While made different combos because his daughter doesn’t eat spicy stuff. A true father and family man here! I strive to be a thing close to this man. 💯
A tip if your oil is too hot, you are right, don't panic. Always leave yourself a little room in your pan. If the oil is too hot, just add additional oil to cool it down. For fish I usually try to keep my oil right around 350. I am partial to peanut oil, I feel like it's less greasy than vegetable oil. Looks delicious. Love the colors of the side, I bet that alligator gar makes some mean fish tacos.
All my life when I've caught gar, I always threw them back because I was told they weren't good to eat because they were too bony! I'll try this method next time I land one of these gars.👍
I got this little clear dew drop stretching out of the side of my mouth. It's drool. The stir fry looked delicious too. My wife hates purple cabbage and purple onion but will chomp down on a beet in a New York minute. All I can do is just scratch my head and wonder. Anyway, you did a most excellent job of preparation and plating. My compliments. It looked SO good!

Nice vid....gotta try frying with olive oil....the crisp and flavor beats peanut which i thought WAS best....but try it...olive oil lowers bad cholesterol. all the rest are bad for arteries when fried in.😎👍
When I was little, a family friend would always give us Fried Gar (cooked like fried Catfish). He would give the cleaned bleached scales to my grandma for free. She would paint them and make earrings and jewelry out of them; then sale them. She would always try to give him a cut from her profit but he never take it. Fond memories of growing up with my grandma and the man who always gave us Gar, Bass, & Catfish after his fishing trips on the Falcon Lake, Zapata, Texas in the 80s.
I like mine with part corn meal(Zatarain's fish fri) and part flour. You can then add onion, peppers potato and seasoning(with cubed gar) and make Gar Balls or Boulettes
One time while fishing for catfish I somehow managed to hook a needle nose gar, I got it in and it died from the hook. I'm from central Texas and most people here say to toss them, that they're worthless... That's the stigma they have here. I didn't feel right about wasting that fish so I filleted it to make some cut bait. Nothing bit on it but I was really surprised on how great the meat looked, white and flaky. I have been curious about how it would be to eat one every since. I know the ones you're showing are gator gar but it doesn't seem like there'd be much difference from it and a needle nose. I love cooking and could imagine they'd be tasty marinade in buttermilk, tossed in a flour batter seasoned with garlic salt pepper and a healthy amount of cayenne! Thanks for the great video. I really like Gar. It doesn't matter if it's alligator, longnose, or spotted. I usually fish the Brazos river and the creeks that run into it. The pot you were using to fry in looks very interesting, I haven't seen one like this. where can you find those?
I'm thinking about all the spotted and needle nose that I've had die on hooks while running lines on the brazos and it's making me feel bad. Seems like they're the most populated fish out there, a literal buffet that people turn their nose up to.
