    This was the first time I’d heard anyone outside my family talk about finadene. It struck me in a way I’d never felt before, bringing up memories of countless family dinners where we made the sauce throughout my life. How almost everyone in my family prefers it when my sister makes it, and all the times I’ve tried to get better at making it myself. How I watched my island-born grandpa make it when I was young and how he probably used Thai chilies when he was going but used jalapeños now because they were easier to get stateside when he first came. As well as leaving me thinking about the generations before my grandpa, each making the sauce in their own way, their own memories intertwined with the meals they shared over it.
    It’s beautiful how strong the memories tied to the meals we eat can be, how deep the cultural ties run in something as simple yet fundamental as recipes passed down through generations, surviving despite everything their people have endured. Many thanks to Mythical Kitchen for giving me this beautiful experience.

He know how to host a show and he is a intelligent talker, he could literally host a actually serious culinary travel show like Anthony Bourdain. Where he talks about food and they're origins..... Hi! Fellow Peruvian hereI love that you tried our recipe and yes our culture is soooo diverse and I love that about it but as the hard food critic I am, there are some tips I recommend for the chicharrón de pollo is that instead of cornstarch you use potatostrach, and for the salsa criolla Aka the onion it's pretty simple you cut some onion thinly and leave in an ice bath and while you wait you make a mixture of lime, salt, pepper, very little oil and most importantly msg yes it does have some herbs but really only with chicharrón which is pork, after making you're mixture removed the onion dry and mix it with your concoction and it shouldn't be pink or anything they onion should look fresh hope you try it out :D

    As a man from the North East of England I grew up eating parmos. I’m forty now and have only had 12 heart attacks!
    Seriously though, we do tend to serve some “salad” with a parmo. Depending on where you go it will typically be raw red or white cabbage, pickled cabbage, or a few places do creamed cabbage.
    There may also be the usual takeaway salad suspects of shredduce, tomato and onion.
    We also tend to treat parmos as being akin to a pizza base, so you will get varieties like “the hot one” generally with some kind of spicy salami, or my personal favourite, the bolognese parmo, which adds a beef ragu before the béchamel and cheese.
    You could probably do a whole episode on parmo abominations. Hell, I’m in the US next week, I’d probably fly to LA to come be a cultural ambassador and taste tester! 😂

      If it helps I'm British and this is the first I've ever heard of it; you probably have more of a claim to call it what you like. Even if it was invented here it's certainly not a common food: American southern fried chicken is far more familiar in the UK

    • @JayTraversJT
      @JayTraversJT Місяць тому +18

      I’m part Brit and part Italian so I’m sure I can somewhat answer that. I don’t think i’ve ever heard Parmo in the UK. It’s definitely not the norm. I’d argue the more common is Paa-muh or Parma tho.
      Also, not to make it any more confusing but in Italy I’ve heard even more pronunciations for it lol. Hell, most people still call Parmigiano Parmesan half the time.
      Edit: apparently the dish was made in north Yorkshire so that adds up. I can see the harder accent spinning it that way.

      Pizza? Oh that could be fun. I'm from Sweden and while we might not have the worst Pizza in the world we have some that would cause a lot of nasty comments. For instance I can't remember ever eating at a pizzeria that didn't have pizza with pineapple on the menu. Same with banana on pizza. From what I've heard those are considered abominations by most people. A few years back the most sold pizza was the kebab pizza and it was sold primarily Saturdays and Sundays as a pick me up after heavy drinking was taking it's toll. I have no idea why using kebab meat on a pizza was made so popular, but apparently it works when you are fighting a hangover. But really, pizza is so flexible that you can add almost anything to it and it will still be fine. I knew a pizza chef who tried to sell me cheese free pizza. It was something he had started eating when he was trying to control his weight and he was very fond of it. I never ate one so I have no idea if it really was good. He also served champagne to pizza as he thought it was a perfect match for taste.

    I went to university (college) in Teesside. The parmo is the perfect food on the way home from a night out. Especially with pepperoni and chips. Just don’t think about the macros

    Parmo is pretty rare in the UK, except in the North East, Middlesborough, Newcastle etc. I'm from the North West and you can occasionally find it in takeaways, topped like a pizza (Pepperoni, Jalapenos etc).

    My partner is from Middlesbrough and hearing the whiplash of Parmo being mentioned and ACTUALLY done right (can also be done with other toppings basically treating it like a pizza) was a wild experience. I got introduced to the Parmo after I started dating him and its honestly so hecking GOOD and if anyone gets the chance to go to Middlesbrough, I 100% recommend getting one. I've since learned to cook it at home and its become a staple of one of the foods we eat on a treat night (bc all that deep frying and the cheese is not good for anyones cholesterol lmaooo)

    At least the Australian Parma uses a tomato sauce/passata base with cheese and ham on top. The acid can at least cut through the fattiness of the breaded fry, which the UK Parmo is missing.
