    This has been our experience as well! In fact when I added a long ferment sourdough to the mix it was even easier to digest. This is our go to sandwich/toast loaf.
    1/2 cup fed sourdough starter
    5 cups freshly ground einkorn
    1/2 cup sprouted rolled oats
    1 1/2 cup water
    1/3 cup honey
    2 tsp salt
    Mix it up and cover and let rise for 8-12 hours.
    Pour into greased loaf pan and smooth with wet fingers.
    Sprinkle with an additional 2 Tbs. rolled oats.
    Cover and let rise for 1-2 hours.
    Bake at 450 for 30-35 minutes with a pan of water on the bottom rack.

      Thanks for the recipe. I recently broke down and bought some einkorn berries, but haven’t milled them yet. So far, my favorite loaf is 1/3 spelt and 2/3 hard white. And, my tummy is much happier now that I’ve added all that insoluble fiber to my diet!

      Yes! I use a Sourdough starter with 50/50 Rye and Einkorn starter, then make my bread with all-purpose Einkorn. I was gluten free for almost 15 yrs due to a severe gluten sensitivity. I can now eat bread! I can’t eat a lot of it at one sitting but I can at least have a slice with dinner. So nice. I missed REAL bread ❤

    I've been using it with tapioca(arrowroot) flour to make the best crispiest waffles I have ever had. I'm using about 1/4 to 1/3 tapioca flour to 3/4 or 2/3 einkorn flour. Remember batter should be like heavy cream no thicker. These are the best waffles I have ever had !!

    For anyone else who has been on the fence about trying einkorn flour: there is also commercially available einkorn pasta. Make sure it's a pasta made ONLY from einkorn and not regular wheat. Making the pasta is a typical 10 - 15 minute process, much like any other pasta, and it's a much lower time commitment than making bread from scratch. If you are able to eat a bowl of the einkorn pasta without any problems, then you'll likely be fine with any homemade bread or other edibles made with the flour.
    I am, and was, by no means a bread-making expert and before I invested the time to make einkorn bread, I wanted to know if I could just eat it. I ordered the pasta online, and that was how I did my first "einkorn test" if you will. I just tried making einkorn bread for the first time today, after eating the pasta safely for 6+ months, and it was DELICIOUS and no reaction at all!!

    Soaking/sprouting grains adds another level of health benefits. The grain then becomes a plant and is more digestible.

      I'm getting there. It's a little hard because of the spoiling 😕 but I ordered fermenting jars and sprouting lids for my Mason jarrs. Should make it a easier process 😊

    So UPDATE???
    Are you still able to eat the Einkorn….. how do you guys feel, have you tried Khorasan….. are you still hand cranking or did you get yourself a stone mill……. So many questions….. maybe time to do an update vid???
    For sandwich bread - add an egg yolk and 2 whites….. soak the milled flour for 60min- and then your regular recipe- it will hold its rise better…. And will be moist!!

    Same, I’m very sensitive to wheat and have been wheat free for years but have been playing around with einkorn and want to try rolls next.

    Have you tried bread from freshly ground flour? I have issues with “bread” but not freshly made from wheat berries.

    I just made the most amazing turkey dumpling soup with einkorn dumplings... the turkey and broth was from our thanksgiving turkey.
    Here are some good resources for good einkorn recipes: Live Simply, A Modern Homestead, the Elliott Homestead, Mary’s Nest, Everyday Dishes and Farmhouse on Boone.

    Had never heard of Einkorn before you guys did the vlog where you were millimg it. Not sure where in the UK I can get berries but I did manage to some organic flour. Now I just need to find out how to use it. Any suggestions on adapting 'normal' recipes to using Einkorn and or coconut flour. Thanks guys.

    Have been gluten free for a good 10 years too. Would consider it watching some videos showing us how it can be used...gluten I recently found out, gluten causes bone loss. I have been making oatmeal flour in my blender and using it with baking powder and an egg to make my own flat breads.

      I found no science to indicate that "gluten causes bone loss".
      In fact I googled it, and there were only 8 results.
      I think you are mistaken, in that it's Celiac disease that can contribute to Osteoporosis (bone loss). So if you don't follow a regiment of treating Celiac (eliminating gluten), it's the Celiac that can cause bone loss.

    I thought you said “silly disease” lol celiac is the last thing I want which is why I quit wheat and gluten in general after my blood test for gluten intolerance.

    I'm going to have to give this Einkorn flour a whirl....we do enjoy our waffles, pancakes, etc. on occasion, but just have not been able to find a good recipe using almond flour or other alternatives. They just don't taste good!

    Einkorn is from turkey and its so cheap here. We turks call it Siyez

      90’percent of flour is einkorn
      Thats why i was why in usa i feel
      So depressed when i eat bread and in albania i feel energy

    its not low gluten, its a completely different type of gluten in einkorn

    I think what inspires trendy food eaters and creators is.....key words like , 'Einkorn, an ancient grain" and "grown thousands of years ago'..... before other grains/flours.
    Wow, what a perfect grain !!! It MUST be good for you !! It is ancient !
    The other side of the story is.... "it's different how you cook it" .... and that's all.
    There's no magic....... there is no ancient mysticism. Sorry for such a boring ending.

    I hate gluten-free products. My step-daughter is a gluten-free nut and had her WEDDING cake made from gluten-free stuff, can't call it flour. It is the only time in my entire long life that I threw away the wedding cake! Yuck is to nice a word to describe it. There is nothing wrong with gluten unless you have Celiac disease. Very, very few people have that.

      Yes, very few people have celiac disease, but a much larger group are gluten sensitive and when we eat gluten products we are negatively affected. For years I put up with restless leg syndrome. My feet and legs just ache so bad. I was popping Advil’s and using pain relieving creams and I’d still be getting up and down all night. Then I found out I was sensitive to all grains except rice. The wheat intolerance was especially high. Within 3 days of going GF no more restless aching legs.

      Yeah, my debilitating migraines and constant painful eye sensitivity went away after I quit gluten. I don't really care what you or any other person has to say, I know from personal experience that celiac disease is not the end of the story. I would never go back to the life of torment that I used to live.
      Sorry your piece of cake wasn't perfect.

    SO i have celiac disease. People with this cannot have einkorn. It is an autoimmune disorder unfortunately so the consequences arent worth it

      check out dr. michael holick channel; he claims severe low levels of vit d3 causes many auto immune diseases and a proper level of that vit in the blood cures it and many other issues! plenty of comments on his channel confirming this. we started taking 10,000 iu/vitd3/day and its done wonders for us!
