      mluddenjr awesome! It’s the best thing to start with, because it’s very hard to mess up. And even if you do, you’re only out like $8 instead of a $100 brisket

    Love this video. Thanks for sharing. New to the smoker and new to smoking. Trying my first shoulder today. Is there a way to quickly lower temperature if you get it too hot?? Asking for a friend of course, ha. Thanks.

      Brad Raybourne awesome thanks!! That’s why I say to start with a shoulder or pork butt.. take time, but they are like $9 so you won’t be depressed messing it up like a $60 brisket lol. Thanks again!

    Thank you for making this video, I've used your video several times now and the meat always turns out excellent. I have a question though, in one part of the video you say that you added a piece of wood during the middle of the cook. How did you add the wood, did you have to take the meat, grates and stone deflector off in order to add the extra wood? And if so, how did you get the grill back up to temp?

      Ya you do… you really shouldn’t do that… but I was still learning that you need to spread the wood around, not put it all in the middle.. makes it last longer. Thanks!!

    How do you decide whether to place the deflector up or down? What brand charcoal do you use?

      I decide based on what I’m cooking.. makes no difference in the temp, just can add more room. And I use B&B charcoal.. best one I’ve found

    How accurate is the LG thermometer to the probe thermometer?
