    This is the recipe we developed and have been using for many years. Use your favorite recipe.
    The whole batch was about 26 lbs. (about 50 cups)

    Starting your freeze dried food pantry. 100 Days: The first 50 batches - Freeze Drying Your First 500 lbs of Food
    Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
    I'm freeze drying because:
    Just to freeze dry leftovers?
    You want to make your own food for camping/backpacking?
    For if/when the SHTF?
    For a short term emergency?
    You have your own garden and want to freeze dry the food?
    You love Costco but don't have a family of 6?
    You are good at finding the food sales but only have 1 freezer?
    When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
    I'm going to start freeze drying from scratch, pretending that I don't have a rack full of freeze dried food.
    If I knew then what I know, I would have freeze dried things in a different order. Maybe not, because I started freeze drying was because we had 3 full freezers, I was thinking of getting another one, and I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
    This list is about getting started on a 500 lb mixed pantry of freeze dried foods in 100 days.
    (This may be a bit optimistic and perhaps it'll only be 400 lbs)
    Goal of about 85 lbs per category. (100 lbs per category if we don't do the Meals/Dishes)

    Freeze dried food will stay fresh for many years and be ready and waiting when you need it.

    Chili
    Dan/SchoolReports
    Makes about 50 cups
    4 ½ cups dried pinto beans (900g) rinsed
    4 ½ cups dried kidney beans (880g) rinsed
    8 quarts water
    4 Tablespoons salt
    -------------------------------------------------------------------
    8 cups beef broth
    8 cups water
    2 teaspoons salt
    2 pounds chopped onion (900g)
    3 tablespoons minced garlic
    3 cups Pace Picante sauce
    4 cups salsa verde - Herdez or Embasa brands are both good
    1/2 cup chopped green chilies
    1 cup chili powder
    1 tablespoon crushed red pepper flakes
    2 teaspoons ground cumin
    ¾ cup red wine (optional)
    4 tablespoons Better Than Bouillon beef base
    1 tablespoon dried oregano
    4 ½ pounds beef, course ground, lean, browned well in small batches
    6 cups crushed tomatoes
    12 ounces tomato paste
    2 tablespoons bacon bits
    Soak beans overnight in 8 quarts water and 4 TBS of salt, then drain and rinse well. (or use quick cook method)
    Add 8 cups water, beef broth and 2 tsp salt, cover and simmer low for 3-6 hours, until beans are almost tender. (could be less time)
    Add the rest of the ingredients, simmer very low until everything is tender, 2-4 hours.

      I think that people tend to freak because of the fats, yet have no problem with ice cream or eggs, and both have more fat than the tuna salad.

But I watched you do the chocolate muffins and thought now wait a minute you can’t do bread or chocolate and there you were doing both!! Your videos gave me the knowledge, tools, and confidence to get a freeze dryer. Thank you so much!

      Remember, I'm just another idiot on the internet. I could be wrong. The #1 joke at our house is "But, I saw it on the internet!" 🤣
      Consider looking at what commercial companies are doing. That's where I look to for guidance. Commercial freeze drying companies _HAVE TO_ get it right every time or they don't become an old company! Mountain House has been doing this for more than 50 years. If they can do it, we probably can too (with method adjustments), and they have meats with 40% fat by weight, dry. mountainhouse.com/collections/freeze-dried-meats/products/ground-beef-10-can
      One viewer said that they were told to ". . . soak then rinse and then soak then rinse, to remove as much sugar as possible" when they did PEACHES. 😵‍💫
      I've even seen one video where "they" state, as a fact, that if you put an oxygen absorber in a bag with your baking soda it could make it EXPLODE. I'd love to see the science behind that. I looked at the chemistry and I just didn't see how. If you heat baking soda it decomposes into sodium carbonate, water and carbon dioxide and can put out fire. I realize that some things like baking soda don't need oxygen absorbers, but explode? I don't think it would be too much to ask for them to share the scientific paper/article. I'm not trying to convince anyone of anything, I'm just trying to show what I do and why, and show resources when I can. It was seeing some of the non-research freeze dry channels that first got me to start posting my own videos and I stopped watching freeze drying videos. Some of the information out there just makes me wonder where it comes from, and makes me sad.

    I LOVE your shirt, and your videos! I just had my FD delivered this past week and an waiting for lift help to get it on my cart and set up. Do you have a dedicated 20amp circuit for your medium FD?

      Thanks, and thanks for watching. We don't exactly have ours on a dedicated circuit, but it is on a circuit that doesn't have much else on it. I'll record the power meter a bit on the batch that starts tonight (Batch 28, cottage cheese) and show the highest power usage I see. (2017 medium machine) I think the max is less than 1400 watts; less than a hair dryer!

    Is there a reason that you chose the smaller pans vs another set of HR pans? We chose to order an extra set for pre freezing. I am curious if you feel the smaller ones work better. And Chilly!!! Always love me a good Dad joke.

      I prefreeze things in the other pans because: 1) it saves freeze dryer time, 2) I have the older, tilted machine which means I can't pour liquids into the trays in the machine, 3) I make very large batches of food when I cook so I may have 5 freeze dryer loads (or more) from a single batch, 4) prefreezing slightly lightens the load of ice in the freeze dryer 5) by prefreezing in the small, 2 cup pans (about 1 lb), I have pre measured quantities when I do the final bagging 6) we have a lot of freezer space available.
      We have had up to 15+ batches of prefrozen items waiting for the freeze dryer, and 15 sets of trays would be a bit spendy and still not give us the smaller, pre measured quantities.

    Have you tried vacuum sealing the bags with a moisture absorption bag inside instead of just sealing them with a moisture absorption bag inside. Thank you Donnie

      I have never added Silica Gel (or any other desiccant packs) to my Mylar bags of food, but I have vacuumed sealed some bags.
      I have no issue with vacuuming the bags, except cost of the chamber vac, the fact that I don't see it as a big plus, time (maybe a minute per bag x thousands of bags), and the potential of crushing some delicate foods.
      I would always use oxygen absorbers for long term storage, even when vacuuming, because there is still going to be small amounts of air/oxygen between every particle of food. The oxygen absorbers will remove the oxygen exponentially better. Of course, both might be better.
      I don't think that putting desiccant packs in with the oxygen absorber would do any harm because they do completely things and probably won't interfere with each other. (Though I don't think Silica Gel will do what people think they will do, because it stores the water, it doesn't convert it. It's still there.) I could be wrong, I don't know enough of the science of Silica Gel.
      Desiccant packs may be worth using, but I never have and I haven't seen any science/commercial papers saying that I should, and Mountain House freeze dried food packs don't have them.
      I found this in the Q & A area at PackFreshUSA: The desiccant absorbs moisture. If you have an Oxygen Absorber system with a good seal, there is not really a need for one usually. . . . You wouldn’t be the first to use one and it certainly wont hurt... it just is likely not necessary.
      They sell desiccant packs, but it doesn't sound like they are trying to sell them to us. (Us, meaning people doing home freeze drying.)

      The defrost baffle thing I made for my sister's machine is better and simpler than mine. It's just cut from a piece of plastic corrugate I haven't yet made a video about it, but I show it a bit in a few videos ua-cam.com/video/CAg8Ntlt8_Q/v-deo.htmlsi=zXZHjUF0zlO-c0cu&t=1488
      The front shield is just something I made.
      The machines don't NEED the disc. However, for us it's a useful addition because of two related things: condensation and heat transfer.
      The front disc is 0.075" thick acrylic (1.9mm thick) I would probably use 1/8" (3mm +) next time. Once the machine is under vacuum the pad or disc probably don't matter, but while it's freezing it seems to help. (think airplane window) I love how good of a job it has done and have not experienced any downside. Here is how I made it. Making an Acrylic Disc Front for a Harvest Right Freeze Dryer ua-cam.com/video/erH1VDqNi80/v-deo.html If your freeze dryer is like ours, (2017) the opening is not quite round. My sister's new (late 2022) machine has a chamber that is very round. We will be making a disc for her machine and I think the fact that it's round will make it easier. Her machine is a medium and I think hers is just a simple 11 7/8" diameter actual circle!
      I should mention the silver stuff around the seal too.
      The silver stuff is metalized film bubble stuff that is used for shipping cold stuff. We got our bubble stuff when it arrived wrapped around some frozen food, (a cake, I think) with frozen cold packs, from Harry & David. I saved it knowing that a use for it would show up. And Voilà! (Viewers have told me that it can be found on Amazon and local building stores as bubble foil insulation wrap)
      I put this on to better insulate the seal area because the seal would freeze and end up with ice and frost on it. Then, when the freeze dryer was defrosted, the ice would melt and water would run down the front of the freeze dryer. I measured the space between the door and the front of the freeze dryer and cut strips of the insulation material that wide. Next, I cut enough to wrap around the seal 3 or 4 time, taped them together end to end, and finally, wrapped it around the seal and taped the end. This has to be done a differently on the newer machines, I'm working on it (and a video) for my sister's newer machine.

    Please tell me where you get the smaller pans you use to pre freeze in your regular freezer before you freeze dry the food. I can’t find any that are small enough to fit in the FD trays. Thank you!

      There is a picture of the 7x7 pans on a post a few months ago on the channel community page.
      These are the pans we've been using for years to prefreeze food for freeze drying. They fit our (2017) medium freeze dryer trays. We got these a couple days ago at a local Dollar Tree for $1.25 each. And who knew that they have them online too!

      Do you mean the 7 x 7 pans we use for prefreezing? They are pans we got at a Dollar Tree store. The pans are a near perfect fit ** for our medium freeze dryer trays. (We got ours at the store, but they do have them online. www.dollartree.com/cooking-concepts-square-cake-pans-75-in/10065 )
      ** Clarification on the 2 1/2 pans per tray; it only works IF the divider is the thickness I use. (or thicker) The freeze dryer trays actually fits about 1/2" less than 2 1/2 pans.

    The dividers you 3D print what filament are you using to make them? I have tried your file but they will not maintain shape. Assume I am using the wrong filament?

      @@coreybrown3137 Sorry, I don't know what to tell you. I must be missing something. What do you mean by not hold shape? Mine are so solid I think I could drive over them with my car and not hurt them. I printed them using ABS because it is easy to vapor smooth and seal them to prevent anything from getting in them.

      The printer is not a high dollar printer so that maybe the issue. But they are not even as they layer up. Causing them to be out of level. I really appreciate you taking the time to try and help.

    Looks great! Thank you for sharing the recipe. How spicy (hot) is this? It is a lot of chili, but also a lot of chili powder! I like some heat, but worried this might tip the scale a bit for me.

      This dry chili powder tends to be more flavorful-ly spicy, but not too hot. I hate hot for the sake of hot, no flavor, just burn. I don't even like Taco Bell hot sauce, only the mild! ( and I love the mild, lots of it, 2 to 5 packets per taco; great flavor without a lot of heat.) Of course starting with less is always a good idea when not sure.😇

    Great video and thankyou for the recipe , I've never been able to find the chilli paste anywhere here so may have to watch a youtube to see if i can make it , my husband is a huge chilli fan and I grow a lot of different ones for him , anyway I was wondering if you sell your printed items i am very keen to get a couple of those little washers for the door , Thanks .

      Surprise! We have notes on each batch we've made in the past 10+ years, for repeatability, even if it's just 'yep, we made a batch of it on this date.'
      I'm not really interested in getting into selling 3D printed stuff (I wasn't planning to get into teaching 3D design and printing either, but ended up teaching for 3 years, so who knows.)
      Sorry, I'm not selling any, but I would be willing to try to send you a couple of them. You just can't buy any.
      It could be fun to try to send something to the "imaginary" Australian country/continent! 🤣 (Again, I read it on the internet, so it must be true.)

    I’ve found that I need to double seal my bags from topmylar on setting 9 on my impact sealer

      I might have to get a few bags from TopMylar to compare their 7 mil bags to the 7 mil bags I've been using. I like that TopMylar has 1 cup bags, but wow! their bags are a bit spendy.

      @@amy3458 Well, I only keep 30 or 40 on hangers in the closet at a time. And some hanging on the stairwell walls, and some hanging on the other walls, and some packed away because - seasons, etc. Some are 30+ years old.
