It's extremely salty and typically used in conjunction with something else to balance the very salty flavor like we used it as one of the toppings for bibingka, a charcoal baked Filipino shortbread specially popular during Christmas season, sold outside the church during the 9 day evening mass leading up to Christmas. ☺

The red egg (also referred to locally as salted egg) is perfect if paired with tomatoes, and diced green mangoes. The saltiness of the egg will compliment that bland taste of tomatoes, and will balance the sour taste of the mangoes.

Seafood looks so good, just look how Darien push whole squid inside his mouth 😄 Hudson suits the crab more cause it needs a little patient to take the meat out! What a fun day!
