- Last hunting season, Randy Newberg was lucky enough to fill a Montana wolf tag while out looking for whitetail deer. Since harvesting that wolf, he has hinted at how he planned to eat the meat. He packed out all the meat possible and was waiting to get some expert opinions on the safety of consumption.
Well he finally got the okay, and decided to cook up some wolf meat as well as mountain lion. He got the crew together at the office for a special lunch. Paul Kemper prepared the mountain lion as a pulled "pork" sandwich, and Randy put the wolf in a sous vide machine to make sure it hit a safe temperature before finishing it on a hot Burch Barrel.
He roped some of the others into trying the meat as well. The consensus is surprising, although Randy says he'd prepare it a little differently next time.

Would you try wolf meat? What’s the craziest thing you’ve eaten?
When it comes to meat, id try anything once. With that said, have not eaten anything to crazy. Pig brains and whitetail caul-fat are the most out there I've been... thus far
Yup, I'd giver a try. I bet you could cook the hind leg you still have just like that cougar and make pulled wolf, lots of sauce, low and slow. Or use Hank Shaw's barbacoa recipe and make tacos!!
I started trapping this year, just so I could try new meat/ animals. 2 main goals were beaver and bobcat. Beaver was great, somewhere between beef and pork No luck yet on the 'cat, but I do have a small/ young raccoon in the freezer :) Goal for next winter is a trip south, for Gator and Iguana!
I've eaten a few possums and raccoons. Usually boil it bringing it up slow and then taking it to the smoker seems to work.
Probably beaver, raccoon and bobcat. I'll try any meat once. I'd love to try wolf a wolf hunt sometime. I think it'd be a real hoot

I think that's the way to go with these type of meats. In my opinion this should have been brazed down and not grilled. Smoke it for a couple hours low and then wrap it in foil with a whole bunch of butter!

This is the same mindset I have and my kids have too. We feel like we should eat whatever we kill, if for no other reason just out of respect for that animal. Case in point, my 9-yr old daughter trapped her first bobcat two days ago, and last night we skinned it out and got it stretched. The cuts of meat are currently in my fridge marinating for a batch of bobcat tacos tomorrow evening! She was so excited, and can’t wait to eat it. That is a 9-yr old girl! If a young child can have that mindset, then why is it so hard for so many adult hunters to have the same? She videoed much of the events, and now she is wanting to make a catch, cook, eat video of the whole bobcat process for my channel now! 😆. Keep up the fantastic work Randy & crew!

Try it. I think you will find it worthwhile. Just don't ruin it in prep, like I did.
Cook it at a lower temp for a longer amount of time like 24-48hrs! Will be really tender and won't have to worry about disease.
When those coals stuck to the meat all I could think of is Corey Jacobson saying you should toss the meat and eat the coals!
Predator meat tends to be very tough and sinewy, due to high-intensity useage (when they run after prey). It also tends to be riddled with parasites and diseases they collected from all the prey they ate. Both issues can be easily solved by cooking the meat low and slow, like in a dutch oven or a roasting tray. Your buddy's "pulled mountain lion" idea is a pretty good way to go about it. Doing the wolf the same way would probably be pretty tasty. I once had a friend who chucked a slab of coyote into a slow cooker with salsa and just a little water and cooked it all day on low, then shredded the actual meat before transferring it and the salsa into a skillet, where he added black beans and "southwest-style veggie mix," and heated it through. He set this out with flour tortillas and cheese, and had us try his "coyote burritos." They were delicious.
Can you describe the taste of wolf and mountain lion?
I've been told, that canids tastes like a wet dog smells, unless you remove the glands. I went back and we watched your earlier wolf vids. And you never go into how to do this.
Lambing season is about to start around here. When it does, we have a pretty serious coyote problem. I would love to be able to eat my kill. Is there anyway you could go over finding, and removing these glands?
I like your comment "If I shoot it, I eat It" That is my philosophy too, at least in the last 40 years! I was taking out some friends on a Mule Deer hunt on Horseback, and a guest came with one of my hunting buddies, The first morning he shot a bloody Fox. My buddy told him he better get cleaning it up for dinner that night , He thought that we were pranking him, until I cooked it up for Supper and handed him a plate. He ate, we all ate it, It was OK, but won't be on my list of Game to eat. :) Cheers

Reminds me of a guy that raised emus. When asked about eating the meat he said "that first bite was tough to take". Same comment from a guy I knew on his first experience with "Rocky Mountain Oysters" from a big horn ram. Maybe a blind study is best, where you don't KNOW that it is before you try it! Next time, maybe pound it with a meat mallet before cooking.
Hi Randy liked your video, just a quick thought, I was reading somewhere that if you freeze meat solid for a month or two then the micro organisms that are nasty die off, making your meat able to be eaten. Personally I just cook the meat in a toxic mix of sauces then eat it, only time I got sick was after I ate some chicken that I got from the local supermarket, never been sick from wild game. It depends on the species of the organism and the climate. Some parasitic species are freeze resistant, especially those organisms that infect wild game in cold northern climates. So, where freezing hogs from Texas will generally kill parasitic organisms, freezing bear from Montana likely will not.
Per CDC: Freezing wild game meats, unlike freezing pork products, may not effectively kill all worms because some worm species that infect wild game animals are freeze-resistant.

I’m going to agree with the pressure cooking recommendations.
As for how you did it, if you’d have kept in the bag, then straight into the grill still moist you’d have not had it as dried out. The sizzle from the grill dried you out a bit too much once you patted it dry.

I would try it for sure. Love utilizing what I hunt. Would probably either can it or braise it for a long time instead for more tenderness and no disease concern.
I hunted a lot of bears when I lived in Northern Idaho, the standard saying was "spring bear are for sausage" fall bear you could actually eat a steak/ roast. All about Diet... Currently live where we can shoot Whitetails and Mulies out of the same field, flavor is awful close..
I have the utmost respect for Randy and I also try to eat everything that I harvest, including cougar. However, one needs to draw the line somewhere. Killing wolves is part of the game management process for deer and elk. We are fortunate to live in one of the few states that allow it. I have killed rats, mice, whistlepigs and other pests - I am not compelled to eat them. Keep up the good work Randy. I enjoyed the video, but I wouldn’t touch a wolf with a fork.

Randy my wife says to use a pressure cooker to get it tender and you could get it to the correct temperature to rid the disease at the same time . Then you could grill it afterwards .

The best thing I've heard to do is to try and bring the meat up to temp as slowly as possible. I wouldn't do sous vide -- I'd either braise it down, at like 250*F / 300*F in the oven. You can sear the chunks in hot oil or lard, and then add beer or coke to the lard mixture, and braise it in that. I've done bear that way, and it's basically carnitas estilo Michoachan. Add some orange and lime juice, a whole head of crushed / peeled garlic, and some water, just make sure that you check the chunks of meat for temp before serving.
You can cook predator meat way lower than 170 degrees to pasteurize via sous vide. Hank Shaw says he takes bear meat to 145 for 1 hour then sears it.

I wonder if cooking it longer is the key, like with a brisket that you take to an internal temp of 195-200 so it breaks down the tissue. Thanks for the video

I was thinking the same thing, layer with fat/bacon, smoke at 225 for a bit, wrap in paper, cook until tender.
I saw on another video where the guy breaded and deep fried pieces of the hind quarter and said it was good.
Soviet troops during World War II often had such meager rations that they had to hunt in order to get enough food to survive. Except when on the verge of starvation, however, they found wolf nearly inedible.
I cannot imagine. I have cut Wolf meat for scientific issues - and it smelled and looked quite good.
Haven't tasted it though, because those we're roadkill or illegally hunted and found way too late. But still looked quite good!

Maybe it would be better in a stew cooked low and slow all day in a crockpot. Maybe try to smoke it low and slow all day. There should be some way to cook it without drying it out or making it tough. There has to be a wild game chef that has come up with a way to prepare wolf. Maybe you could make a brine and let it soak up some flavor and moisture overnight like a turkey or a pork cut. I'm from the south so we typically beat the hell out of a lesser cut of beef and fry it then smother it in gravy.

You don't need to go to 165+ with sous vide for that long. As a total guess you only needed to go to about 145. There are charts available showing time/temp to achieve pasteurization and kill any potential critters in the meat.

With all due respect. I ain't eatin' no wolf, coyote, cat or canine of any size shape or form. I love wild game, but, I have my limits. I do some smoking of meat, but anything that you leave on for that amount of time at that heat, you might as well chew on your shoe tongue. Chew on my friend!! 😇

@@laurenpfenning6003 yep I agree with you on the lion meat. I've cooked it many different ways but I really prefer to make jerky with it. We home make all our own jery the old fashioned way.
Cook it like a beef brisket in the smoker. Gets it up above 200 degrees and it’ll be tender.
The long awaited, much anticipated WOLF Beast Feast. Properly done I would try it, I have yet to truly try bear and cougar. The Predator Trifecta as it were. Now as far as coyotes, I am not sure about that. Might be like a smaller bodied wolf and be fine when properly taken care of.
As a cook we use the sous vide machine all the time. You just need to add stock like vegetable stock maybe beef stock. Will stop it from drying out. Less time on the grill maybe
Can also grill mark or lightly cook on the grill Then finish in sous vide machine

You can get that meat fork tender. Put a smoke on it at 200 to 225 using a large chunk of meat. Smoke 4 to 5 hours to let temp hit that 160 ish then wrap in foil and turn pellet grill or smoker up to 275 and cook until internal temp of 195-200. The meat will fall apart. Make sure it rests for at least 30 mins before you poke or cut into it.
Try canning it, it will break it down to where you can make pulled wolf sandwiches.
Slow cook till cooked, shred and cook for 1/2 hr in BBQ sauce. Your temp should have been reached and have some BBQ sandwiches. I did this with Bear and the whole tricinosis issue. Hope this helps.
I'm thinking instant pot pulled wolf. We put tough cuts, goose legs and porcupine in the instant pot until they fall apart and then eat it like pulled pork. Porcupine actually comes pre-seasoned with SageLok... Win.
You might try it in a New Mexico chile stew style. I bet that would be good
Get in touch with Rinella. I think he’s only had trichinosis once and it was from undercooked bear meat. But no joke, the guy is a hell of a chef/great cook, and he’s probably cooked it before....
Me, being from the MS delta, I’ve tried just about every kind of meat except for wolf, coyote, and mountain lion. I think I’ve tried just about every other animal/fish/bird/reptile. I’ll try anything once. Stay safe and God Bless

Think I’ll pass on wolf (they just stink when skinning) but gotta hand it to ya. I have eaten lynx and they are delicious.
I also bury all my old dogs that died so I don’t think I’ll ever be unclinded you eat one( however when going college on Maui I was given barbecued Poi dog,I didn’t know it at the time) it actually tasted ok but due to the psychological aspect I didn’t eat any more
But I gotta hand it to you for utilizing your game animals. Maybe less seasoning and let it hang and cure a while might tenderize it more and enhance its natural flavor. Probably gonna taste a bit like Elk😂 or deer perhaps even Labrador or poodle.

I cooked a coyote head overnight once in an old deep fryer at 170F to clean the skull. Had a hard time not sneaking a bite it smelled so good. But the eyeballs looking at me made up my mind on that one. Still would probably have to be pretty hungry to eat a wolf.

The Corps of Discovery frequently ate dogs when Elk, Beavers and Buffalo weren’t plentiful. I wonder if they included Wolf and Coyotes when they described “Dogs”. I know Beaver back strap is delicious! Reminds me of veal. I’m curious now, how wolf tacos would taste! I better get Hunting!!

The problem with wolf meat is there is very little fat. I found this with coyote as well.the best way to cook it so it's not dry and yet bring it to a safe temperature is confit it or cook it in fat I did mine in both duck fat and bear fat than season it and grilled it. Might try it turned out well when I did it.

A slow cooker or smoker could get the wolf to temp without drying it out. For the smoker I’d wrap it in foil first and let it smoke at 175 until it hits temp

Pretty clear that Randy doesn't do much cooking, methods 1,2,3 for the culinary challenged
#1 cut into steaks, marinate in spices,olive oil and teriyaki. Grill on 650 degree until it reaches internal temp of 160, let rest then eat
#2 inject roast size pieces with favorite red meat marinate, smoke for 2-3 hours until internal temperature reaches 160
#3 inject roast size piece with favorite red meat marinate, sear on 650 degree grill, put in slow cooker with beef broth for 8hrs on low or until it can barely be picked up without falling apart.
You should make some 5 alarm chilii with it! ::)
What parasites are you hitting that high of a temperature to eradicate? I’m not sure what UA-cam channel you used for your sous vide instruction, but you may want to check out sous vide everything. Any chance you can post the pulled cougar recipe?

Brown it in a hot pan as a roast, then a slow cooker for minimum 6 hours to 8 on med. heat. It won't go rubber, in fact it will fall apart, and will keep internal temperate well up into the safe range, to eradicate any possible bacterial or parasitic condition. Good Luck, I and my family have ate over 30 bears, with zero issues.

Hey Randy, glad to see you finally decided to try wolf meat. I’d love to. We don’t have wolves but do have coyotes and I always eat the coyotes I kill. We like it best in stew; in fact that is my wife’s favorite stew meat. OK, thanks again for breaking the ice on this. You’re the first of the hunting celebrities to eat wolf. Randy, if it is tough then you didn’t cook in long enough. I suppose souse vie is OK but if you stew it for 4 hours on a simmer it will be quite tender. Marcus, compared to venison it might be “overdone”, but I don’t think you’d want to eat a canine on the undercooked spectrum. Really, try stewing.

Yes, I watched that MeatEater episode and they did a crazy cook! Burned the hair off the whole animal and then roasted it whole like a pig over a wood fire, then didn’t like the flavor of the meat at all. I’ve spoken to them both and neither wanted to eat Coyote again after that. My compliment to Randy had as much to do with his care in preparation, inclusion of friends, and willingness to try something few others would consider trying and then document it for us. Where Rinella’s presentation did nothing to promote the consumption of canines, Randy’s made a good case for it. That puts each presentation at opposite ends of the spectrum and Randy’s is the end we should be striving for.
Oh I agree, much more care here. I believe rinella was doing his based on a method he’d seen used on his world travels. Doesn’t really translate to american diets or tastes. I totally agree its not just cooking what you eat but doing a careful preparation and trying to make it taste good. Besides rinella, newberg, or hank shaw, I can’t imagine another hunting show that would try this. Usually they end at the kill shot and walking off into the sunset. Thats why we love these guys!

When I shot my first mountain lion last year here in Washington I skinned it out an me an my other half posted it up on Facebook an people kept saying it was good eating so my other half said quarter it up so we had some for lunch an ill tell you I was quite impressed that it tasted an even looked like pork chops
