I favor the tablea from the Philippines as it has no added sugar , pure and simple . Those from other countries have added fructose & other spices like cinnamon . Fructose ( corn syrup 4 example ) is INFLAMMATORY thus negating the anti inflammatory property of cacao .
It's near impossible to buy tablea here in the states unless u have family in the Philippinevs who can get it to u. For substitute , I use 70 percent cacao chocolate , tablea is 100 percent cacao . I was thinking of using cacao butter to compensate for the 30 percent . But I still have to figure out the ratio on that . Thank u for this excellent video.
@Anskie Espina , hindi magkaiba sya . Ang heavy cream same as fresh cream na may 35 , 40 or 47 milk fat content na ginagamit sa pang frosting. Pero pwede rin gamitin ang all-purpose cream , hanap ka nalang ng recipe na all-purpose cream ang gamit. Salamat.
