this is his version of green seasoning, its not Jamaican as he says,we don't put ginger, rosemary or some of those other things he used.vinegar will ruin your dish be warned.
Vinegar will not ruin your dish if you used a small amount in your preparation . Example half a small teaspoon and make sure you buy a good quality white wine vinegar or Asian white wine vinegar. Vinegar is to preserve the taste of the seasoning for at least two months stored in sterilise glass jars or freeze as chef Morris suggested.

You shouldn’t say that, it’s mean. I have made my own jerk seasoning from time to time. All those things are in Jamaica. Some Jamaicans will use different seasonings especially the older people. My mother told me about dishes her mother used to make when she was a child. So please be respectful. God did not make those herbs for the Spanish people alone.
The Haitians have a version and calls it Haitian. Love your culture and do as you please with naming dishes, condiments, etc. Jamaicans are not mad at you!

Chef once you buy thyme wash it and dry it store it in a paperbag....thyme for months and it doesn't loose the flavour😊
Good idea. I also store in a brown paper bag in the draw area of the fridge, keep well.
Trying to plant thyme, but seems hard to catch, maybe it's my soil.

Also each Jamaican person is an individual and do this differently, at the end of the day its what you like .
My cousins mom used vinegar so anyone who learned from her also used vinegar! Try it.
