I just made this curry and it's so good I'm amazed. I got a bunch of fresh fish balls from the store instead of making them from scratch and I used three birds eye chillies split down the middle instead of the bigger ones and the spicy kick with the fish flavor is perfect 👌 will definitely be making again and trying more of your recipes as well!
This is absolutely not reliable , I am from Hongkong , but we never make curry fishball in this way and you will never find curry fish ball with non deep fried fishball in Hong Kong street

Tried making the fishballs after I got your cookbook! I love the taste, but my fishballs are very brittle. How to make them more firm and springy? I used defrosted cod and prawns.
I guess this is your take on curry fish balls. Properly made fish balls shouldn't need cornstarch as a binder, I know they add it commercially to cut costs. I also don't remember the curry sauce having coconut milk in it, but I'm sure it adds to the flavor.
Can i use store bought lobster balls and switch the chicken stock to a broth? I can't seem to find chicken stock or any stock here in my country, and i like lobster ball more than fishballs. 🤔

for firmness add more cornstarch. For bouncyness you really need a mixer in addition to the food processor with more egg white.
