Chef Atul Kochhar's Chickpea and Kale Curry

  • Chickpea and spinach curry is quite a common dish in India, but as I had some kale handy I decided to devise this version - and I have to say, I'm very pleased with the result. I hope you will be, too.
    You can replace the water with vegetable or chicken stock, if you want, but it's really not necessary. This is a quick-and-easy curry, and one of those dishes I would just put in the middle of the table for everyone to help themselves. This recipe is vegetarian and vegan friendly.

    Lovely! This is clear and easy to follow. Seems very delicious too. Gonna try this for sure. And this might be irrelevant but Chef Atul is perhaps the neatest, cleanest chef I’ve seen! Not a thing out of place! His hair, his spotless ceaseless shirt, and the kitchen equipment. Just, wow.

    I can't eat kale or chickpeas with my bowel adhesions and IBS, but I do eat and make curry, mild ones, and I love his simple, relaxed style, no tantrums or drama, very watchable chap. The spice box is beautiful, makes them look like a paint palette, puts my jars and packets to shame!

    Love the recipes...however, if I may suggest putting the ingredient list in the description. You may want to take your spice box and do a video on what is in there as well as describe the different spices in the description. Thank you!

    Really good- the fresh ginger and lemon juice at the end were pretty different from my usual chickpea curry recipes and gave it a fresh POW! By my usual standards for curry, it's incredibly fast and easy. I could even eat it cold, and it makes a great leftover because kale can take a nuking.

    Med/high heat
    1/2 tbsp oil
    2 clove garlic, thinly sliced
    Cook garlic for a few mins
    Add
    1 onion
    1 tspn chilli
    Pinch salt
    When onions are soft/translucent,
    Add kale, cook until wilted
    Add
    Pinch salt
    1/2t Coriander powder
    1/2t chili powders to taste
    Stir gently
    Add chickpeas
    1Cup water
    Let cook
    1/2Tbsp Ginger, Julienne cut
    60-100ml coconut milk
    Dash of lemon juice
    Mix and serve

    1 onion thinly sliced 3 cloves garlic thinly sliced 2 green chilies
    oil then cumin then garlic, onion, and green chili pinch of salt
    soften the onion.
    Then add kale pinch of salt again coriander powder turmeric red chili
    then add chickpeas add a cup of water
    then add julienne of ginger and coconut milk 30ml
    end with a dash of lemon

      Rita Wing you can just type indian recipes and they are all going to be nearly vegan. All you might have to do is replace Ghee or Paneer with suitable substitute if they were being used in the recipes.

      Homemade dishes are more wholesome yes having Michelin word around the dish makes it more attractive. However I am glad you are enjoying Veg food. My comment was in general to help you with veg food.

    For me, I'd love to try this out coz I prefer less spicy, simple vegan food except for the canned peas😊. I prefer to soak it overnight and boil it.... No processed foods for me😊

      You know, in the Hindu culture, we believe a good cook NEVER TASTES his food... he/she just knows, & those who taste ar not good cooks. I used to see the elders of our homes never tasted while cooking. Even today meny do not taste. It is considered rude & unhygeinic.

      @Ronald S I dont see a point in tasting the food you prepare for the purpose of making a video, its just something viewers like to see. Seasoned or not, he can just go: "this is perfectly seasoned" and we would know fuck all about how it actually tastes. There is no point really. Just like there is no point in reviewing sound speakers when you cannot let your audience hear the sound they produce.
      The point of food recipes is in technique, its how you make the dish blend, whether you like it more salty, tangy, sweet or spicy is up to you.
      On another note, Im pretty sure if you prepare food for living you pretty much know what something tastes like just by experience.

    When i soaked my chickpeas over night, do I have to boil them for a bit before i add the kale? Otherwise the kale would be overcooked right?

    Sorry Atul, my Irish grandfather wouldn't eat kale. He said it was cattle feed. So in this recipe, I'll be using spinach.

    I might make something like this tonight. It is true that chickpeas are high in protein, but it is 'low quality' protein. This means that it lacks certain essential amino acids. Very few vegetable sources of protein contain complete protein, these include soya and quinoa. It is great to be a vegetarian, but you need to know what you are doing in terms of nutritional science.

    If I am using coconut milk then I also use some sambar masala. And instead of using cumin I will prefer to use mustard and coriander seeds.

      I think it was Jacques Pépin who said something along the lines of ‘when making a recipe for the first time, make it the way it’s written so that you know how it’s supposed to taste ... .’ Since I’ve started doing that it’s amazing how many new flavor profiles I’ve discovered, often by using fewer herbs and spices than I was tempted to .

      Indians eat drastic amounts of ghee and dairy products which contributes to a lot of animal suffering. They probably don't know about what happens to bobby calves.
