What does "overlock the edges" mean and what kind of machine was that next to your sewing machine?

I used an overlocker, which is often called a serger in North America (I didn't know this when I made the video). It cuts off excess fabric and binds the edge with a 3 thread stitch. Not essential, but it tidies things up nicely.
