Specially the pura vida part :) For most things you mentioned are on point, however some things are not so true or realistic, like taking a trip to the Cocos island is not something a normal tourist would do realisticly speaking since it is very far away from Costa Rica and you need days to plan and permissions to go there. Also 6 coffee cups a day for the average costarican?! Where did that information came from? I don't know anyone doing that so often, so to be that the average per person seems quite excesive. Also usually we don't recommend visiting San Jose since it is not a very nice citiy to visit, so don't waste time going there, you will find the same foods in any other place you visit. Finally after 2 years I planned a trip. Fly between Mexico, Costa rica, Columbia. No covid test or vax required just getting back to the US without these things will be a little interesting but I'm determined now already wasted 2 years of my life sitting around because of this nonsense.
DON'T GO. Lived there for over a year. COSTA RICA IS way over-rated and definitely overpriced. American prices (and sometimes even higher) for hotels, food, gas, drinks etc... and it is all much lower quality. Retail items like clothing and electronics are way more expensive that in the USA. Lodging has many non-functioning items, uncomfortable beds, food is generally boring at restaurants, taxis expensive, and customer service everywhere is non existent and they actually don't really care. I'd prefer Nicaragua or Panama in Central America. Actually, I should have lived in Brazil for my year abroad. Big mistake on my part. So many other beautiful places in the world to get a great bang for your buck. Try Vietnam or Croatia.

Bocas Del toro is not part of Costa Rica it is part of Panama
