That strip of metal is directly over the burner, so I think it is worth having the additional protection of the burner & the heat coming from the stainless burner gets a little extra diffusion along the middle.
It cooks unevenly because the large burners shoot the flame out the side of the burners and not the top, so there is very little heat directly over the burners. It's a terrible design. Good quality parts in it, but the engineering on it was a complete failure. I regret my purchase of it (bought mine 2 years ago).

I had a Weber Genesis Gold about 10 years ago, and that thing was bulletproof, cooked evenly, was never covered, and sat through Minnesota winters. Fired up the first click every time. Never had a problem with anything in it. Had it for 9 years. I regret getting rid of it, but had to, as I was moving.
Not impressed with this grill. I've owned it for a year, and found the heat distribution very uneven. There is very little heat at the center of the flame tamers, due to the design of the burners. Also, the grill flares up A LOT. If you plan on cooking anything but lean cuts of meats (i.e. burgers and brats), be prepared to babysit your cook, and have a water bottle nearby. The top shelf is basically useless, as it is only 3-4 inches deep, and impeded by the round top. My other dislike is the GODAWFUL cart that is an option for this grill. It is overpriced, and poorly thought out. Sharp edges everywhere. Extremely poor castors, and terrible castor placement. They are too small in diameter, and are recessed several inches under the cart. Unless you crawl on your hands and knees, you will not be locking them. The castors only roll well on very smooth surfaces. Even transitioning on a concrete sidewalk with troweled relief joints is a challenge. The grill/cart weigh about 300 lbs, and it feels unstable moving it. Also, the cart has absolutely no handles on it whatsoever, and the flimsy side shelves (held on with sheet metal screws) and not fold-able. The doors are hard to open, and there are no shelves or drawers inside. Just a big open cabinet with lots of holes in the bottom for things to fall through (or animals to crawl in). On the plus side, the optional infrared burner works very well for searing steaks, and the overall quality of the grill feels solid. The cooking grates are very heavy duty and retain a lot of heat for searing. Fix the flame tamer and/or burner design, redesign everything about the cart, and I think you have a winner. Update 5/14/2023: I really hate this grill, and rarely use it. It is an utter nightmare to clean, which you will be doing often due to the poorly designed flame tamers with tiny holes that constantly plug up. I just spent 2 hours cleaning it. My old weber could be cleaned in minutes, and cooked much more evenly. I do like the cooking grates on this grill, but that's about it.

Charcoal is great too, we think the amount of smoke & flavor you get when the drippings hit the flame tamers would pleasantly surprise you.
