Enjoy Grazia's fish ravioli with shrimps from Liguria! | Pasta Grannies

- This is a great summer pasta dish using fresh thyme as the herb - which is not so usual in the rest of Italy. Grazia's recipe uses sea bass, but scorpion fish, red mullet, any fine white flaking fish will do the job.
for the pasta: 300g 00 flour, 3 eggs, 1/4 teaspoon fine salt
For the filling:
1 tablespoon olive oil
500g fish fillets
2 sprigs thyme
50ml decent dry white wine (the kind you are happy to drink yourself)
pinch of salt
zest of one organic lemon
For the sauce:
400g raw shrimps, shelled and diced
500g cherry tomatoes
50ml of the same white wine
sprig of thyme

Hmmmmm.... just imagine that.., sunset at Cinque Terre, warm wind, a nice glass of white wine and a plate of this wonderful ravioli... and someone to enjoy this with 🍷🧡

I watch these wonderful pasta grannies videos and can't help wondering who the heck could down vote them? I'm Italian. I feast my eyes on the background scenery,, the kitchens and listen to the Italian language instead of reading the subtitles.. It makes me miss my relatives so much!.
We spent some lovely time in Manarola and the Cinque Terre during the Easter celebrations. Amazing place! Beautiful people! Beautiful life memories!! Aah the lemons, basil, limoncello, and the Via del Amore! What a chef this beautiful grannie is!

Ms. Vicky, outstanding recipe by Grazia, looks delicious. Sea bass is very costly here, but in Appalchia we have 3 breeds of fresh water bass that are very tasty. Bass from smallest to largest are small mouth, large mouth, stripers. 2 recipes, #1 are bass made wrapped in parchment paper with the ingredients,then poured over ravioli or gnocchi,# 2 is wrapped in pastry dough with things like garlic, onion, thyme, dill, etc... both recipes are steamed/baked, that is close as we have to Grazia's recipe, God bless you all
First thing I wondered was how this ravioli dish would work in America with either ocean fish, or with freshwater fish like trout or bass. Very nice dishes!

This channel has inspired me to make my own pasta and pasta dishes - I have so many ideas! - but... nobody I know even likes pasta so there's nobody to eat it if I cook some :(

I tried the sauce on some linguini and it is a good sauce. I used olive oil. Sunday is pizza and pasta day for me. I am trying to lose weight and I had some mediocre pizza from Costco. Good pizza is a two hour drive and ferry ride away from me. Next time I go there, I am going to try a calzone with artichokes, roasted red peppers and feta.
Someone tell me the best part of Italy for food... I want to move there.
Quite frankly, all of Italy is great for food. That is the most democratic place in which you can find amazing food - it just depends on your taste
I want to try deep fried pizza. There is also this flatbread that is folded with cheese and other fillings like a taco. I have been watching Italia Squisita. From Hollywood I like Sicilian food the best. There are Italian delis in Los Angeles where you can get good cheese and products.

These clips are wonderful, but sad, in that they illustrate the end of the traditional Italian family. The nonne talk about their childhood, their large families, learning to make the pasta from their mothers and grandmothers. Is there a single young Italian woman who has any interest in rolling out pasta by hand? And there are not three sisters to help. ‘Sicuramente un gran peccato.’

Hey Vicki, I hope you’re reading. First of all I am a big fan of the show and I love what you’ve shown the world. However, it pains me to say that I think the content has gotten stagnant lately.
The recipes are getting very similar to each other, and the story telling as well. To the point that whenever I see a granny slapping her pasta sheet I just KNEW you would be commenting about how that is a sign of a good pasta maker. It’s just so… predictable… borderline boring… I think this is hindering the show’s growth and it is reflecting on the viewership of the show. I hope you can work on innovating the shows, with new ideas, new story telling methods, etc. I understand this show is about showing traditions, however at the end of the day, UA-cam is entertainment. Without the entertainment value, the channel can’t go up.

I have some pies and dolci recipes in the next few months- is this a change you would like to see? As for story telling would you want me more in front of the camera? @@pastagrannies may be you can incorporate more house tours, footage of the local area, interesting tidbits that dont even have to be pasta related. Birds. Plants. More cinematic footage of the same thing you’re doing. And I don’t mean you would have to be in front of the camera. I mean you could include other types of stories, may be include some humor. Prompt the grannies to talk about other things other than “when did you start making pasta”. Even things like “what do you want to tell the viewers” or something interactive would be a welcoming change. The possibilities for change are endless.
