Corn Chowder with Bacon and Potatoes - SOUPer Bowl Sunday #1 - a traditional comfort food

- Corn Chowder with Bacon and Potatoes
4 slices bacon
2 - 11 ounce cans Shoepeg Corn (or 3-4 ears fresh corn)
2 ribs celery, chopped
2 carrots, diced
1 small onion, diced
6 small gold potatoes, cubed
1/2 red pepper, diced
1 teaspoon paprika
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
pinch of cayenne pepper, optional
6 cups chicken broth
1/4 cup cornstarch
1 cup heavy cream
salt & pepper to taste
Using a medium to large soup pot, fry chopped bacon until it is just done.  Remove bacon pieces from the soup pot to drain on a paper towel lined plate, leaving as much bacon grease in the soup pot as you can.
Add the celery, carrots, onion, potatoes, and red pepper to the soup pot, stirring well to coat everything with the bacon grease. Cook over medium heat for about 5 to 7 minutes just to start the cooking process. Add the corn, paprika, onion powder, garlic powder, and cayenne pepper; and cook for approximately 30 seconds.
Reserve 1/2 cup of the chicken broth to whisk with the cornstarch. Add the other 5 1/2 cups of chicken broth to the soup pot. Bring to a boil and cook for 15-20 minutes or just until the potatoes are done. (You can insert a knife into a piece of the potato to see if it is soft and ready to eat.)
Once the vegetables are cooked, whisk the cornstarch into the reserved 1/2 cup of chicken broth. Slowly stir this into the boiling chowder mixture. Boil 2-3 minutes or until it is slightly thickened. Now, stir in one cup of the heavy cream. Reduce the heat and simmer for another 2-3 minutes.
Sample the chowder to see if you need to add salt and pepper. I normally add about 1/2 teaspoon of each, but you can add it to your taste preference.

I am left-handed. Fortunately for me, my father was left-handed, and my mother had a great love and admiration of him. When the school tried to change my chosen handwriting, my mother challenged them, and they stopped messing with me. Being left-handed has some challenges, considering that everyone assumes the world was designed for right-handed people. HUMPH!
I made things work, but in my forties, I went to work at a clothing factory as a machine operator. I worked there for a number of years before I realized that sewing machines were created especially for left-handed people! LOL ... most all of the manipulation of fabric through machine under the needle is done with the left hand. It was an exhilarating realization!
Left-handed people are special - - there are only about 10% of the population is left-handed. I could probably go on, but ... LOL
Only left-handed people are in their right minds.

Wow the corn chowder looks amazingly good. The brown delicious bits at the bottom of the pot was called pan drippings by most of our grandparents. The French call it Fond which translates to “the bottom” or “base”. I can’t wait to try out this chowder. ❤

Back in 2014 Michigan had a very hard winter, We was snowed in a few days before Valentine's day. we don't go all out for that day because I think we should treat those we love good all year and not just the one day Hallmark tells us to. I went in and wanted to cook my husband a good dinner yet I had very little to pick from in our home due to being snowed in, I seen this recipe pop up On the computer and I had all the items I needed to make it . That was one of the best meals I have ever made my husband for Valentine's day. 🙂

Really looking forward to this SOUPer series. Definitely off to a good start with this one. I'm a lefty here too. My grandmother told my mother to make me change, because that's what they did to my grandmother when she was a child, but my mother said I was just fine the way I was. Yes, it has obstacle sometimes, but it also teaches you to be incredibly adaptable to exist in a world created for righties. I actually like black pepper in my creamy foods because I like to see the black flakes, and I'm one of those who likes a heavy hand with pepper. I'd probably add the cayenne or maybe some hot sauce to it. I like spicy. As always, truly appreciate these videos. Thank you!

Wow, this is almost identical to my mom's recipe for Ham and Corn Chowder, one of my earliest childhood food memories. Before I knew what it was called, as a 6 year old, I used to ask her if she would "make some of the white soup." I'll be 73 at the end of April and to this day I still make it and love it as I have my entire life. Thank you for this video! Something I learned years ago was, as a thickener, instead of using corn starch is to use some instant mashed potatoes, as a thickening agent and really the only thing I use them for, a little bit goes a long way.

I use instant mashed potatoes too! Once (many years ago) I was making tuna salad for sandwiches for my husband's (now ex) lunch for work. I had too much mayo in it so I added instant mashed potatoes to it. Worked like a charm & he really liked them & he had no idea I added the instant mashed potatoes. Plus it thickened it enough to make him 2 filled sandwiches from one small can of tuna.

This was one of my favorite soups my father used to make. He never added cayenne pepper, not even sure it was even available or used in Canada in the 60s. His recipe was a little different but he learned his when he worked on ships in the 50s.

Hi Tom and Melissa. Thank you for the yummy chowder recipe. After all my years of cooking I have discovered a trick to keep your eyes from burning while chopping onions that acutually works. I have learned that onions seek out liquid, the closest being your eyes. Wet a paper towel and lay it near your cutting board while chopping onions. Eye burn solved! :-)

There’s nothing could be better on a cold day. We only eat homemade soups. No canned stuff! Except for tomato soup with a grilled cheese. Even then I have to doctor it up with Italian seasoning and some fresh basil, chives, a little sugar etc. thanks Tom and Melissa 🥣🌽🥔🙏🙏🙏

I made this last night. I did a taste test. It was delicious. 😊We let it sit over night. Today … maaaaaaaaaaannnnnnnn, it’s waylicious!! Made so sweet cornbread to serve with it. Fried up some sausage and put that and the bacon in containers and encouraging people to get whatever meat protein power they want as a topping: fried sausage or bacon on top vs in the chowder. Or some of both. It’s deeeelicious. Thank you so mucho❤

I made this for the family tonight and it was another hit. I doubled the recipe and used a whole pound of bacon because who doesn't like bacon. I did use half a cup of cornstarch because I doubled the recipe, but it didn't thicken like yours does. It was still wonderful! The family (six of us) have loved the White Chicken Chili, the Poor Man's Soup and now the Corn Chowder. I just made the fourth batch of Fire Crackers today because those are so addictive for everyone, especially me. I'm watching your tutorials looking for good food I can make for them (I live with my youngest son and his family) and contribute to the good food we sit down to at our table. I love soup!!! Perfect! Protein doesn't only come from meat. Cows don't eat meat, and they get pretty big. The cornbread would provide protein with the flour and cornmeal. I modify your recipes to not use animal products, and they are good and much much healthier.

I love seeing someone on UA-cam using the fabulous Cutco knives. I’ve had mine since 1971 (52 yrs) and I just sent them off to be sharpened for the first time. Thing is, I use them everyday so I become a little anxious about being without them for any length of time. I’ll get over it I’m sure. Way to go Tom and Melissa.

I love homemade soup and it’s my favorite fall/ winter food. I try to make a pot at least every other week . Soup and salad or soup and sandwich is a cold weather staple here.

I used homemade chicken broth I had canned that was full of flavor I also used home grown canned carrots and silver queen corn I had cut off the cob and frozen as well as everything else in your recipe minus the red pepper which I don’t like. Looks delicious. The only things I add are a cup of shredded ham & a bit of green bell pepper. I'm also also left handed, but there are many things I do right handed, as well. I never give it a thought, I just use whichever hand comes naturally to me. Hey Tom, have you ever tried "mirror" writing? Artist Leonardo da Vinci often used mirror writing. I heard it was to keep people from reading his notes about his inventions. Whatever the reason, when I was a kid I found I'm really good at it. Just a quirky thing that impresses people. Give it a try. 😄

It's been gone awhile now after generations of family running it. It was down home cooking nothing fancy. I have always made and loved corn chowder. Only difference is i use cans of cream corn. It thickens the soup without using a slurry. I also use half pkg of bacon. I make a huge pot. Gone in 3 days.
