In this episode Captain Mike and Chef Valerie head offshore in search of Tuna, Kingfish, Mahi and Sailfish. When met with no current, it was time to slow troll live baits in order to find the bite.

I was literally about to ask how did/do you cook the king. Oily fish best smoked? Can you link a recipe to try? I’ve never smoked any personally. Thx!
@@Phelpsie06 How I do it is, I cut the fillets off the king fish leaving the skin. Cut each fillet into 1/3rds. Depending on size about 8”-12” each. Soak in a salt water, brown sugar brine in the fridge skin side up. The fillets should float. If not, add more salt. About a cup of salt should do and a cup of brown sugar should do. Let sit for 24-36 hours in the fridge. Take out and pat dry. Add some seasonings of your choice to the meat side of fillet.
Take 2-3 sticks of butter, A cup of brown sugar and honey and put all into a pan on the stove. Bring to a boil and let it caramelize just a little and then take and pour on flesh of fillet when you start to smoke. Smoke with apple wood for about 1.5 to 2 hours at 225*. Maybe less maybe more so you will need to watch. With all that said. This will be the very best king fish you will ever have. I planned on making it into a dip. But the fillet turned out so good we ate it as a meal. Don’t be afraid to hit me up with any questions.

Depends. Do you want a semi-custom boat built to your specs or can you work with just about anything? I got this boat about 90% how I planned it and very happy so far.

Why do you use the bag for your keepers vs using the fish box? Just curious.

Why don’t you use trolling motors? It might be a good option for slow trolling, also handy for spot lock instead of anchoring.
