  • Me and my mate George went to the Bushcraft Camp to cook up some fresh Pheasant which George had shot on his farm. George shows you how he preps the Pheasant at camp, I get the fire going and we deep fry the bird in bread crumbs. We also have some beers too....

    A little tip, one hand for the egg, one hand for the breadcrumbs. Then you have at least one clean hand, and the breadcrumbs wont pile up on your fingers.

    This could be a sketch from the fast show!! It is so British country side it cannot be true!! Been a long time since Ive had pheasant....had a small cottage opposite the game keepers......free pheasant and duck on tap!!! I dont shoot, but I should, thats why I got a springer lol!! Still, nice to see a bird actually being prepared and cooked rather than just shot for fun! Great vid!

    Again a brilliant video, you may of mentioned it, and probably did it, but although it's less likely in a game bird you must prevent Salmonella and Campylobacter cross contamination by washing your hands in hot soapy water after touching raw birds.
    I used to work in a game and poultry shop in Shropshire and we used to use a blunt knife to trap the feathers against the thumb to pull out the feathers without ripping the skin, then used a blow lamp to singe the odd ones missed to make the bird presentable.
    We all hated the ones that had been hung to go high, yuck.
    Thanks for the video, it brought back fond memories

    Also mate use flour ,egg mixed with a small drop of milk then breadcrumbs with Chinese five spice ,salt and pepper.its good and the crumbs stick very well you can also add Cajun seasoning for a southern fried style try it with chicken the flour also helps the breadcrumbs stick to the chicken skin or phesant skin also use plain flour I hope this helps and I hope you try it its amazing.

    You can avoid plucking the pheasant by putting it head down on the ground, stand on the wings and pull the legs up. It skins the whole bird and leaves you with a clean carcass.

    pheasant and generally game have to have the intestines removed immediately after killing for hygienic reasons as the bird is dead the intestines are culturing harmful bacteria that can contaminate the meat, also when you remove the intestines need to be really careful not to pierce them and touch the internal flesh. In order to remove the feathers dip the bird in boiling water for 15-20 seconds and then clean it, small feathers can be burned, an important step is the maturing process before cooking as otherwise, the meat will remain hard and chewy; the first step is as soon the animal is killed to drain it from any blood by cutting the neck and hanging the bird to drain slowly, then remove the feathers and intestines and then hang it to mature in a cool place for 17-20 hour. Wash the bird very well by rubbing it with coarse salt and rinsing it with cold fresh water and vinegar. When cooking pheasant soak it in red wine and laura leafs overnight, next day dry the bird and fry it in olive oil until golden brown add onions and garlic with some salt pepper allspice thyme and 1-2 laura leafs let the wine evaporate and add boiling water simmer till the meat is tender and falling off the bone, serve it with mashed potatoes :)

    • @lukejones1244
      @lukejones1244 5 років тому

      Do you mean soak it in red wine during a second night, or during the first 17-20 hours that you mentioned while it is hanging, for example, in a plastic bag?
