Such a lovely recipe! And the fact that you only have to cook it for ten-fiftheen minutes is amazing! I tried another recipe once and it literally took an hour for the mass to cook down to the right consistency!
@orangedac Believe it or not, what you see in my videos is only a window into my diet. I don't eat this kind of stuff all the time - and most of what I cook for UA-cam gets gobbled up by my friends and family ;) But thanks for your concern...
@creamcandy25 You might be able to make Orange Curd or Lime Curd - but this is really a citrus-based recipe. It won't really work with other types of fruit ;)

I like to use a bain marie (pot in pot with water in it) for my lemon curd, there by avoiding the whole scary glass bowl thing. Fantastic idea with the cold water and I must try the microwave idea when I have my next impromptu tea party. Lovely!

@simpsiano123 In a way, yes. when something curdles it means that you've let the mixture heat up too much and the mixture gets clumpy and starts to get really thick, it starts to turn into a solid rather than staying in liquid form...
@pointeskatecybunny Use whole egg. This recipe makes about 2 cups of Lemon Curd. There is no need to cook it longer, as the curd will thick on cooling. Just follow the instructions ;)
@Farlachan You need to use citrus fruit for this recipe to work. The acid in the juice makes the whole this work. So it's lemons, limes or maybe oranges - but Lemon works best :)

@flyerdude02 I've never done the mixture, but I have made Pineapple curd before and it comes out really well. It works best with sour fruits because of the sugar content, something like oranges would be cloyingly sweet due to the sweetness of the orange added to the sweetness of the sugar.
When I got back from living in the UK for so long I ordered two jars 11 oz each of a UK brand lemon curd that I knew had eggs and butter in it period within 24 hours I had just drunk both jars! May sound gross but it was done a mouthful at a time and then oh I'll just have a little bit more until the next afternoon they were gone. Now I make my own. And it stays in the refrigerator not next to me in this console loveseat with the cup holders in the middle and the space and everything no no! It stays in the fridge and half the time I forget about it.

Caster sugar is known in the United States as superfine sugar. The name means that in the old days when they had the sugar Caster it was like a very large salt shaker the pieces with small enough to be shaking on to things like cereal Etc.

@SaiE8 No it was 3 whole eggs (lightly beaten) - the yolks are usually fairly orange - maybe Australian chickens eat lots of carrots or something LOL

Have you ever done a lime curd? If so, what would be the lime juice amount considering it is more acidy? I have oodles of limes.

The one thing missing is the zest of one lemon. Makes all the difference to that zingy taste. Also use a metal container to avoid damage to the glass.
