WHAT'S FOR SUPPER? | Mexican Inspired Feast w/Homemade Fish Tacos

- Today I'm whipping up some homemade Fish Tacos, Street Sweetcorn, Chips and Guac and Horchata from Guisados to wash it down.
INGREDIENTS
GUAC AND CHIPS
* 3 x Avocado
* 1/4 Cup Cilantro
* 2 x Roma Tomatos
* 1/4 Cup Red Onion
* 1 x Lime
* 1/2 Onion
* 1 x Japaleno
* 2 x Garlic Cloves
* Chips

STREET SWEETCORN
* 4 x Sweetcorn
* 1-2 Tbsp mayonnaise
* 1-2 Tbsp sour cream
* 1 x Tbsp lime juice
* Dash of Chili Cayenne Pepper
* Salt and Pepper
* 1/4 Cup Cojita Cheese
* 1/4 Cup Cilantro
* Vegetable oil

* 2.5 cups (346g) all purpose flour
* 1 Tsp (6g) fine sea salt
* 1.5 Tsp (6g) baking powder
* 3 Tsp (33g) vegetable oil
* 3/4 Cup plus 1 tablespoon (189ml) warm water

FISH TACOS
Spicy Mayo
* 1⁄4 Cup Mayonnaise
* 1 Tbsp Cup Sriracha
Fish Taco
* 2 Tbsp chili powder
* 1 Tbsp Garlic
* 1 Tsp Kosher Salt
* 1⁄2 Tsp Black pepper
* 3 Tbsp Vegetable Oil
* 1 LB Tilapia fillets
* 3/4 Cup Red Cabbage
* 2 x Roma Tomatoes
* 1⁄4 Cup Scallions
* 1 x Avocado
* 1/4 Cup Cilantro

I followed everything with a slight cheat of purchased tortillas and added a jalapeño (seeds included) to the guac.... soo good! Hubby and I are eating now. Thank you!
