    CHICKEN DO PYAZA
    Preparation time 10 minutes
    Cooking time 30-35 minutes
    Serve 2
    Ingredients
    For Ginger Garlic Paste
    1 inch Ginger, slice, अदरक
    2-4 Garlic cloves, लहसुन
    2-3 Green chillies (less spicy) हरी मिर्च
    Salt to taste, नमक स्वादअनुसार
    For Marination
    1 kg Chicken, (Drumstick, thigh) चिकन
    Salt to taste, नमक स्वादअनुसार
    1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
    ½ tsp Turmeric powder, हल्दी पाउडर
    1 tsp Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
    2 tbsp Curd, beaten, दही
    For Chicken Do Pyaza
    2-4 tbsp Ghee, घी
    2 tbsp Oil, तेल
    1 tsp Cumin seeds, जीरा
    2 Green cardamom, हरी इलायची
    2-4 Cloves, लॉन्ग
    5-6 Black peppercorns, काली मिर्च के दाने
    3 medium sized Onions, chopped, प्याज
    1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
    ½ cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
    1 tbsp Ghee, घी
    2 heaped tbsp Coriander powder, धनिया पाउडर
    1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
    ½ cup Curd, beaten, दही
    Marinated Chicken, मैरिनेटेड चिकन
    little Water, पानी
    2 medium sized Onions, dice, प्याज
    1 medium size Capsicum, dice, शिमलामिर्च
    1 medium size Tomato, dice, टमाटर
    ¼ tsp Kewra water, केवड़ा
    2 tbsp Coriander leaves, chopped, धनिया पत्ता
    1 tsp Lemon juice, नींबू का रस
    For Garnish
    Coriander sprig, धनिया पत्ता
    Process
    For Ginger Garlic Paste
    In a mortar pestle, add ginger, garlic, green chillies and grind it into a rough paste and keep aside for further use.
    For Marination
    In a bowl, add chicken, salt to taste, degi red chilli powder, turmeric powder, ginger garlic paste.
    Add curd and marinated well. Keep it for 10-15 minutes.
    For Chicken Do Pyaza
    In a deep handi or pot, add ghee, oil once it's hot, add cumin seeds, green cardamom, and cloves.
    Add black peppercorns and let it splutter well. Add onions and saute until translucent.
    Add ginger garlic paste and saute it for 4-5 minutes on medium flame.
    Add tomato puree and keep sauteing on medium flame. Add ghee mix well.
    Add coriander powder, degi red chilli powder, curd and mix it well.
    Add marinated chicken mix well. Cover it with the lid and let it cook for 6-10 minutes.
    Add water and cover it with the lid and cook for 5-7 minutes.
    Add onion, capsicum, tomato mix well, cover it with the lid and cook for a few minutes on low flame.
    Finish it with kewra water, coriander leaves. Switch off the flame.
    Transfer it into a serving dish, garnish it with coriander sprig and serve hot with roti.

      Hi, I live in the Netherlands as well. I agree but in the Hague, there are a couple of shops that sell excellent quality meat. Also, do you think meats in farmer's market is also not okay? Is is because in India, we can actually get the chicken butchered in front of us, thereby having the freshest meat possible?

The meat quality is different, in India the chicken was tender and small in size.. here it tasted different to me….yes I’ve tried chicken from Voorburg & Haagse farmers market. Sorry didn’t like it 😋 oh btw it feels really good to connect with you here ☺️ spotting Indians in Netherlands always makes me happy

    Happy you posted this Chef! My mom cooks this but I never knew the name of the dish! Also I always struggled with how to cut onions lol so do pyaza makes sense. The time to add shimla mirch was also important and new to me. Cooking this the right way for my wedding anniversary!! ❤️😘

    chicken dopayaza? just 45 years back the skin ie Posth was considered the most tastiest part of the murgh( ie hen/rooster).
    i dont think a chicken dish like this would have been tasty with Posth on murgi!
    it will be intresting to hear your take on this because till 1980ties almost all murgi sold and cooked in was with skin.

    I watch quite a few online cooking videos and started watching RB recently. RB is a must watch. While many chefs are stingy about giving away tips and lessons, RB is generous to share what he has learnt over the years and I believe those subtle tweaks is what makes the dish tasty and enjoyable.     Such a under subscribed channel. Ranveer is all heart while preparing recipes. Love his effort to bring the correct history while discussing the item he prepares.
    Wishing you all the best Ranveer. I am an ardent follower of your channel since past couple of years. All your recipes are close to my heart because the touch that you add to your recipes is way above what any food channel can possibly think of.
    Learnt so much from you as i love cooking. Thank you Sir for so valuable lessons.
    I always believe that while we offer our cooked food to anyone, it goes into their hardware/system and therefore it becomes all the more important that it comes from the bottom of our heart and only Ranveer teaches us how to add that love towards other while cooking who are about to taste our food.

    Very bad experience ranveer sir while making paneer pakora which u told that first fry onion with ginger n chill I made the same but while frying in the karai all paneer gets out from the doe n spread in the oil. Too bad experience sir

    Ranveer aap kuch kam oil ka healthy khana bhi banayenge? Appki har khana lajwab hai lekin jinko health issues ha, woh to yeh khana kha nahi payenge.
    Thanks for the video, I'll definitely try. Last year I lost my mother in covid. Woh aapki recipe bohot pasand karti thi, aur hame banake khilati thi.

    एक प्यारा सा सवाल है कि लोग सरसो के तेल को बहुत ही अजीब नजरिये से क्यो देखते और सोचते हैं? 4 साल से राजस्थान में पोस्टिंग है जब सरसो के तेल में कुछ बनाता हूँ तो यह एक लोग अजीब तरह से बोलते हैं कि सरसो के तेल खाना बना रहे हो? इनके लिए सोयाबीन तेल रिफाइंड ही बेस्ट होता है।
    मैं अपने अनुभव से कहूं तो शायद इसमें उद्योगों का ज्यादा हाथ है। हमेशा से मिलावटी सरसो का तेल हर जगह बेचा गया है। जिससे शहरी लोग सरसो के तेल के स्वाद और उससे होने वाली आंख के जलन और अजीब सी स्मेल की वजह से सरसो के तेल को नजर अंदाज करते हों।
    मैं तो यूपी के गांव में पला बढ़ा 25 साल की उम्र तक पढ़ाई के साथ साथ खेत भी सम्भाले हैं। खूब सरसो उगाई है खूब शुद्ध सरसो के तेल को यूज किया है। ये जो कम्पनियां सरसो के तेल से आने वाले झांक(झार) का इतना प्रचार करते है उतना कुछ शुद्ध सरसो के तेल में तो नहीं होती न स्मेल न आंख में जलन।
