How do I stop my Monster KOI from digging through the soil. And yes I use big stones!!!

Make sure you are using larger gravel on top of the soil in the pots! If that still isn't working, maybe try moving the lilies to a spot that is harder for the koi to get to.

How many waterlilys can I put in one little pond?

It depends on the size of the pond (widthxlength). Your choice of waterlily will depend on the depth of the pond too. For smaller ponds, try dwarf lilies such as Helvola and Izia which like shallower water and take less surface space since the lilypads and flowers are smaller.
