Oh I’m definitely making this! Where did you find pork shoulder steaks that cheap in this country? I always have trouble finding affordable ones here

If I am honest with you I am not to 100% sure but what I know is that in Spain most of the shoulder cuts go to make "Serrano paletas" and into sausages and dry aged charcuterie. They only keep the best and most expensive cuts like "presa", "secreto", "lagarto"... which are all 15euros/kg and up. As a result is really hard to find cuts like in the UK that will cost you less than £3/kg. I have to say the pork shoulder steak I used is one of the most underrated cuts as it is so delicious and tender when flash grilled.

Hi, i would say 'chuleta de cerdo' is the closest thing you can find in Spain, although not the same

Any reason the starch was not washed from the rice?

Hi, I apreciate your comment, let me explain. EVOO can be a bit astringent and over power many sauces when eaten raw. On this case I like to taste the other ingredients, not the oil so much, that is why I used a vegetable oil. There is great vegetable oils out there, it doesn't need to be soy oil with antismoking agents used commercially on fryers, which I agree with you, who knows what can they do to you. If you have access to them you should use the mildest and very refined olive oil, sometimes called "light in colour" olive oil or "pomace" oil that will give you the subtlety needed for this sauce.
